摘要:
AbstractAn improved technique of counting fat globules in milk is described. Frequency curves are given for fresh and evaporated milk in different stages of homogenization. Evaluation of the fat balance yields roughly the correct amount of fat in fresh milk. In evaporated milk a shortage is found, owing to submicroscopic fat globules.
