The high incidence of ambicoloration which occurs in tank cultured Paralichthys dentatus can be reduced if the fish are provided at an early age with a substrate in which they can bury. Evidence is presented which indicates that some reversal of ambicoloration is possible. The presence of a significant degree of ambicoloration may prejudice consumer acceptance of cultured flounder which are sold with skin and heads intact.
