A new dynamic programming procedure for optimal identification of econometric systems is presented. It is based on the serial multi-stage analytical model. This model could be applied for the optimization of the date palm production process. The date production operations are fumigation, washing, drying, pulping and packaging. The optimal requirements of the date drying procedure are estimated.
