Structure and Properties of Grafted Potatoe Starch. III. Microstructure and Interchain Bonds in the Graft‐Copolymer‐PhaseGraft copolymers of polyacrylic acid and polymethacrylic acid, grafted according to theScott‐xanthation process were investigated. By combining different optical methods information could be obtained about interchain bonds in the copolymer phase. From frequency, shape and intensity of different infra‐red absorption bands it could be concluded that there are hydrogen bridges from the carboxylic groups of the side chain polymer to the hydroxyl groups of the backbone‐polysaccharid. These bonds lead to a crystalline copolymer phase which is different from starch and have an influence on the configuration of the polysaccharid chains in

Developments in Starch Ultrastructure Knowledge. I. Wheat Starch Granules.The observations made bySandstedt, in 1946, have been precised and explained with considerable improvement of technics for observations, especially with transmission and scanning electron microscopy. In the outline of the present reviewing concerning new developments in the wheat starch ultrastructure knowledge are studied: 1) The development of larger and smaller starch granules, extracted from the endosperm cells or examined in situ; 2) The lintnerization or enzymatic hydrolysis of lenticular shaped wheat starch granules; 3) The hydrolysis of smaller granules of which technological importance is recalled. A tridimensional diagram is given to complete the Buttrose's one, proposed in 1962.

AbstractThe results of these tests demonstrated moreover that the low sulfur dioxide contents of the starch which had been achieved in laboratory extraction methods are not achieved by industrial process, even with an elimination of sulfur dioxide during the refining steps. The reason for these differences may be seen in the fact that during industrial processing a starch‐water‐ratio has to be checked for of technological, ecological and economical reasons, which is impossible to achieve during laboratory tests.Adsorption of SO2During Swelling of Maize. Results of Plant Tests.During investigations in four German starch plants the already experienced results could nearly be fully confirmed even without an addition of sulfur dioxide during the refining steps. At a high variability of the plant results a general mean value of 23,7 mg SO2/kg had been found for dried starch. In these investigations the highest test value for the sulfur dioxide content was still at almost 47 mg/kg. By comparison, with unaltered processing the general mean value of three plants came to 46,6 mg SO

The Significance of Foam Destruction for Potato Starch Production.During the production of potato starch destruction of the foam is inevitable at all stages of the process as it will interfere with the recirculation of the processing waters.
