摘要:
AbstractIn X‐ray diffractometric studies on starch granules of many kinds of plant species, we found a variety of intermediate C‐type patterns. In particular, specimens of sweet potato starch granules varied from nearly the A‐type pattern to nearly the B‐type pattern. In these studies, we also found that spheroids of short chain amylodextrin showed very sharp diffraction patterns and that we could form amylodextrin spheroids with various types of X‐ray diffraction patterns by varying the conditions of recrystallization. Then we showed that the X‐ray patterns and physical properties of many kinds of cereal and root starches varied to some extent depending on the environmental conditions prevailing during the growth period.We examined the formation and the growth of starch granules in corn endosperm and the inner structures of these granules from the beginning to the end of their maturation by electron microscopic observations. We proved also, the appositive growth of starch granules using radio‐active carbon dioxide. Then we tried to form starch granulesin vitro.But the spheroids obtained from solutions of starch components were entirely different from natural starch granules. AbstractA starch damage analytical method for use on wheat flours has been developed which is rapid, simple in operation, analytically precise, and is independent of any α‐amylase present in flour, as when milled from rain damaged wheat. The new method is based on the use of an analytical grade fungal α‐amylase enzyme, which is shown to be free of contaminating amyloglucosidases, and α‐glucosidases which produce glucose rather than maltose. The level of analytical α‐amylase per starch damage determination was obtained by reference to thin layer chromatography of the hydrolysates so as to obtain maltose as the principal reducing sugar. AbstractStarches have been prepared from two wheat cultivars having contrasted hot‐pasting characteristics. The granules have been separated by successive sedimendations into several size classes and their lipid compositions determined. In agreement with previous work, the lipid is mainly lysophosphatidylcholines of palmitic and linoleic acids in nearly equal quantities. The saturated acid predominates in the smallest granules. The amounts of lipid per granule tend to be proportional to the granule surface areas of the larger granules but proportional to the volumes of the smaller granules. AbstractAnalysis of milled rice samples differing in alkali digestibility pattern, apparent solubility on cooking, and gel consistency showed that the alkali digestibility pattern is not a reliable indicator for differentiating indica and japonica rices. Apparent solubility was shown to be better related to amylose content than to alkali digestibility pattern, but hard gel‐consistency samples had lower solubility values and hotwater soluble amylose than other high amylose rices. The samples with hard gel consistency also had alkali digestibility pattern B. 摘要:
AbstractHydrol ist ein Nebenprodukt der Dextrose‐Herstellung. Seine Zusammensetzung und die anfallende Menge hängen vom Glucosegehalt, vom DE‐Wert des Stärkehydrolysats sowie von den vorhandenen Verunreinigungen ab. Man kann Hydrol durch eine teilweise Isomerisierung der vorhandenen Glucose in Fructose veredeln. Versuche der kontinuierlichen Isomerisierung von Hydrol mit verschiedenen immobilisierten Glucoseisomerase‐Präparaten werden beschrieben. Man erhält einen nicht kristallisierenden Sirup mit hohem DE‐Wert (85–88%) und mit einer relativen Süße von etwa 75%. Die physikalischen und chemischen Eigenschaften dieses „Isohydrols”︁ werden beschrieben. Das Zuckerspektrum des Isohydrols wurde durch Sandwich‐Dünnschichtchromatographie ermittelt. Die Oligo‐ und Megalosaccharide mit bis zu 18 Glucoseeinheiten wurden quantitativ bestimmt. Zudem wurde auf einige Anwendungsmöglichkeiten für Isohydrol eingegangen. Isohydrol könnte erfolgreich bei der Herstellung von Dauerbackwaren, Fondants, Nougat und auch in Kombination mit Aufschlagmitteln eingesetzt werden. Auch kann Isohydrol die Saccharose bei der Herstellung von Erfrischungsgetränken und Fruchtkonserven, wie Apfelmus, ersetzen.
