AbstractEnzyme hydrolysis, X‐ray diffraction, differential scanning calorimetry and Visco/Amylo/Graphy were used to examine the strength of associative bonding forces between starch chains of native legumes. Addition of acetic anhydride resulted in unequal degrees of substitution. Scanning electron microscopy revealed no differences between the external morphology of native and acetylated starches. Similarities in the X‐ray diffraction patterns of native and acetylated starches indicated that acetyl groups mainly entered the amorphous regions. On acetylation, decreases in starch hydrolysis, gelatinization temperatures, enthalpies of gelatinization, extent of viscosity increase during the holding period at 95°C and syneresis, and increases in 95°C viscosity, set‐back and amylose exudation were observed. AbstractPinhão starch paste shows a viscoamylographic pattern that is not usual for cereal or tuber sources, being more closely related to leguminosae starches. The gel is highly resistant to heat and mechanical stirring and it shows a relatively low retrogradation. There is no peak viscosity and the gel is not easily cooked. The opacity is similar to that of cassava starch paste, when hot, and to that of corn, in cold conditions. Viscoelastic characteristics of the paste show a short‐bodied behaviour, more similar to corn starch paste, although some elasticity may be clearly observed. AbstractWheat starch was heated in the presence of emulsifiers (sodium dodecyl sulphate, SDS, sodium stearoyl‐lactylate, SSL, and glycerol‐monostearate, GMS) and samples were viewed in the scanning electron microscope after heating at different temperatures. It was found that the typical morphological changes occurring when the large wheat starch granules are heated occurred at lower temperatures in the presence of SDS, and at higher temperatures in the presence of GMS or SSL compared to the control without any added emulsifier. AbstractMit der stufenweisen Elutionsanalyse und Bestimmung der Zahlenmittelwerte der Molekülmassen konnten die Veränderungen in den Amylosen und Amylopektinen verfolgt werden, die aus Dispersionen von Amylose‐, Kartoffel‐ und Wachsmaisstärke mittels n‐Butanol, bzw. Methanol hergestellt worden waren. Die Dispersionen wurden durch ein‐, bzw. dreistündiges Dispergieren der Kleister bei 120 °C gewonnen. Die Trennung der Amylosen und Amylopektine konnte nicht durchgeführt werden, nur bei Wachsmaisstärke kam es zu einer teilweisen Trennung. Dies ist den milden Verkleisterungsbedingungen im Brabender‐Viskographen zuzuschreiben.Mit der stufenweise Elutionsanalyse konnte festgestellt werden, daß sich die Amylose und das Amylopektin bei verlängertem thermischen Dispergieren des Kleisters von Amylosestärke praktisch nicht mehr verändern, was im Einklang mit den Zahlenmittelwerten der Molekülmassen steht. Bei den analog ausgeführten Versuchen mit Kartoffelstärkekleister war jedoch ein Abbau der Amylose und des Amylopektins zu beobachten. In den Dispersionen der Wachsmaisstärke wurden die Moleküle der Amylose soweit abgebaut, daß sie nach dreistündigem thermischen Dispergieren mit n‐Butanol praktisch keinen Komplex mehr bildeten. Relativ große Verluste traten beim Isolieren der gefällten Konstituenten auf.Es läßt sich feststellen, daß die isolierten Amylosen aus Kartoffelstärke als Substrat bei der Bestimmung der α‐Amylaseaktivität im menschlichen Serum und Urin sowie in anderen

AbstractOut of twelve forced heterocaryons ofA. niger, in nine cases somatic diploids were obtained comprising a total of 107 strains. All were initially examined with respect to general amylase activity in test‐tube microcultures. Over 21% of all diploid recombinants reached a higher coefficient of amylase activity than the parent haploid highly active in this respect. Four most active diploids selected from this group were examined with regard to glucoamylase synthesis.
