AbstractPolarisationsoptisch und quellungsanalytisch geben Stärkekörner im Wasserpräparat eindeutige Reaktionen ohne Aussagen über ihren Chemismus. Diesen liegen erblich konstante Strukturen zugrunde, sogen. Grund‐Bautypen (GrB‐Typen), welche in vielen Fällen ihre systematische Zugehörigkeit direkt erkennen lassen. In manchen Pflanzensippen zeigen Samen andere GrB‐Typen als die vegetativen Organe, es können sogar benachbarte Zellen verschiedene GrB‐Typen besetzen. Die meistenPteridophyten, Coniferophyten, Ginkgo, Chlamydospermaeund ursprünglicheMonokotyledonenzeigen andere Quellungsvorgänge als die übrigen Pflanzen (Pter. GrB‐Typus). Die Vielgestaltigkeit der Stärkekörner ist nicht nur durch die Eigenschaften der polymeren Kohlenhydrate zu erklären, sondern durch die Mitwirkung von sog. “inneren” Substanzen aus dem Substrat der Amyloplasten. AbstractThis article describes a technical system for the manufacture of starch, protein and fiber concentrates from potatoes without addition of process water. Because of a gentle drying, the excellent physical characteristics of the potato protein are maintained and make it applicable in foods. Chemical composition of the starch and protein has been examined. There seems to be good possibilities for application of the products. Calculations indicate a favorable economy using existing spray drying plants, which are idle in the potato season. Spray drying results in an increased energy consumption but this seems to be balanced by a larger product yield/t potatoes, the saving of waste water installations and the excellent physical and nutritional properties of the protein.

AbstractWhen heated with an excess of water, maize and wheat starches show irreversible endothermic gelatinization in the temperature range 65–75 °C. In addition, a second reversible endothermic transition near 100 °C is observed for these starches, but not for potato starch or waxy maize starch. This transition can be reduced or eliminated by extraction of the starches with methanol. The X‐ray powder diffraction pattern of the material in starch which undergoes the 100 °C transition is the same as that of a helical amylose‐lipid complex. The amylose‐palmitic acid complex shows similar endothermic transitions near 100 °C, as does a complex formed between starch and lysolecithin. AbstractNames and definitions in the field of starch analyses by gelatinization temperature are very confusing. A new name is introduced as an attempt to overcome this. It is shown that the Brabender Amylograph cannot reveal the initial gelatinization temperature of corn starch suspensions. However, the apparatus is very suitable to determine the effects of electrolytes on the gelatinization temperature of starch suspensions with compositions as encountered in making starch derivatives. The measured data can be fitted to mathematical equations.

AbstractIn dem vorliegenden Beitrag werden die für die Stärkeindustrie besonders wichtigen Bestimmungen des Futtermittelgesetzes vom 2. Februar 1975 und der Futtermittelverordnung vom 16. Juni 1976 sowie der EG‐Richtlinie für Einzelfuttermittel vom 23. November 1976 und der Neufassung des Anhangs vom 10. August 1979 zusammenfassend erläutert. Dabei werden auch die Probleme der Angleichung der nationalen Futtermittelverordnung an die EG‐Richtlinie für Einzelfuttermittel diskutiert, die bis zum Inkrafttreten am 1. Januar 1981 gesetzlich vorgeschrieben ist.
