Do residues of agricultural chemicals on fruits and vegetables really present a potential health risk to consumers in the United States? What, if anything, should be done by consumers, retailers, processors and distributors, growers and chemical manufacturers? These complex and controversial questions involve issues of science and of judgment. This article reviews current laws and regulations and some key questions under study by policymakers.

摘要:
There is no question that people are interested in the type of diet that will promote health and well-being. They may not phrase their questions in these words. Instead, they may ask about diets to prevent obesity, chronic diseases and baldness, or about diets that will improve their athletic ability, earning capacity and even their love life. And they get lots of answers; which often result in a very confusing picture, just as there are no magic bullets in other areas of health, there are no magic bullets among foods. The answer to “What constitutes a good diet?” is complex.
