With an ever-increasing world population and decreasing arable land, there is an urgent need to improve the quantity and quality of food crops in an environmentally sustainable manner. Plant biotechnology is one way in which these goals can be achieved. Over the past several years, major crops, such as corn, soybeans, cotton, and canola, have been genetically altered to enhance their resistance to pests and herbicides. These changes allow farmers to use decreased amounts of chemical pesticides and herbicides while maintaining or improving crop yields. The next generation of genetically modified crops will be nutritionally improved to have more healthful proportions of fatty acids, higher nutrient levels, and improved flavor and stability. Public reaction to plant biotechnology in food production has been mixed. Part of the difficulty has been the lack of information and understanding of what biotechnology is, its risks and benefits, and the regulatory systems in place to assure food safety. Increased knowledge about biotechnology will permit consumers to make informed decisions about foods derived from this technology.

摘要:
To test the relative constancy of protein as a percentage of calories in world food supplies, the percentages of calories from these nutrients were calculated from the data available in the FAO Food Balance Sheets from 1961 through 1994 for 154 countries. The percentage of calories from fat varied from 7% to 44% over the past 30 years, whereas that from carbohydrate ranged from 46% to 82%. However, the caloric content of protein varied from only 7% to 16%.

Lactose intolerance refers to gastrointestinal symptoms such as diarrhea and abdominal cramps after ingesting a known quantity of milk or milk-containing products. The nutrition counselor is in an ideal position to help patients understand how to control their gastrointestinal symptoms by selecting appropriate foods. Patients can minimize their gastrointestinal symptoms by reading food labels, identifying foods that contain lactose, and using moderation to avoid symptoms, preparing low-lactosecontaining foods, and using lactase preparations when necessary. Patients who are on a lactose-free diet should consult with a nutrition counselor to prevent nutritional deficiencies (eg, calcium) that can lead to serious medical problems.

Historically, nutritional therapy for rheumatic disease has been viewed with considerable skepticism by the medical community. However, increasing attention over the past decade has been given to studying the possible role of dietary manipulation in alleviating the symptoms of rheumatic disease. The most frequent serious rheumatic diseases are rheumatoid arthritis (RA), osteoarthritis (OA), gout, and systemic lupus erythematosus (SLE); therefore, the focus of the current article will be on current nutritional considerations of these conditions.

MEDLINEplus provides free, easyto-navigate access to an extensive array of credible health and medical resources. It links to government information centers and clearinghouses, national health and medical associations, and medical dictionaries. It also links to a site, launched earlier this year, which contains an extensive list of NIH-funded clinical research studies. MEDLINEplus also has the capability to link users to preformulated searches of the MEDLINE database.
