AbstractA review is presented of edible vegetable oil purity criteria developed at the Leatherhead Food Research Association. Most of the work involved accurate determination, by modern GLC techniques, of the fatty acid compositions of oils extracted in the laboratory from oilseeds of known origin and history. All of the main production areas throughout the world were represented in the collection of over 600 samples of commercial oilseeds. No botanial curiosities or hand picked specimens were included as the work related to commercially available edible oils. The fatty acid compositions of the major vegetable oils are reviewed, and the influence this had on the revision of Codex Alimentarius Fats and Oils Specifications is discussed. The development of purity criteria based on the composition of fatty acids at the triglyceride 2‐position, triglyceride compositions by high temperature GLC, sterol compositions and tocopherol concentrations are also reviewed. In the case of maize oil a significant new development is the authentication of the oil by stable carbon isotope ratio measurement. AbstractThe fatty acid profile of a fat blend depends on the blend composition and the corresponding profiles of the constituent raw materials. In principle, the composition of a blend can then be determined via these fatty acid profiles. Two approaches have been applied to tackle this blend estimation problem. In the regression analysis approach the identification part of the problem is handled in a brute force manner: all possible combinations of raw materials are considered. Combinations giving sufficiently close fits to the fatty acid profile with meaningful, positive regression coefficients are retained. The acceptable solutions are sorted in order of increasing complexity and decreasing precision yielding a survey that may help the expert in reaching a final decision. In the alternative Mixed Integer Programming approach the identification problem is solved more efficiently using a branch‐and‐bounds search strategy. AbstractOn the basis of variation ranges of fatty acids (83 milk fats) and triglycerides (763 milk fats) the limits of detection of foreign fats (13 different types) in milk fat are determined. In this respect, on the basis of certain ratios of triglycerides only for soybean oil, sunflower oil, and olive oil and also fo ratios of fatty acides only for soybean oil, sunflower oil, coconut oil and palm kernel oil low limits of detection of<5% were established. AbstractDie Qualitätssicherung in der Lebensmittelindustrie hat die Aufgabe, die Sicherheit des Verbrauchers zu gewährleisten, ihn z. B. vor mikrobiologisch oder chemisch kontaminierten Produkten zu schützen und die Erfüllung der gesetzlichen und anderer Auflagen zu überwachen. Es ist aber auch die Aufgabe der Qualitätssicherung, die Einhaltung gekennzeichneter und beworbener Produkteigenschaften sicherzustellen, um den Verbraucher vor der Täuschung durch Vermischungen und Verfälschungen zu schützen. Anhand der Herstellung einer Sonnenblumenmargarine werden beispielgebend alle Kontrollmaßnahmen beschrieben, die den gesamtem Produktionsablauf von der Rohware bis zum Handelsprodukt begleiten.
