AbstractUnter den vielen Pflanzenlecithinen, die bei der Verarbeitung von Ölsaaten anfallen, hat bisher nur das Sojalecithin kommerzielle Bedeutung erlangt. Es kommt in vielen Varianten in den Handel und wird als Additiv in technischen Produkten, Lebens‐ und Futtermitteln, pharmazeutischen Präparaten und anderen Erzeugnissen verwendet. Einer breiten Öffentlichkeit ist es‐allerdings nicht unumstritten–als Stärkungs‐ und Heilmittel sowie als Geriatricum bekannt geworden. In diesem Bericht werden die wissenschaftlichen Grundlagen behandelt, die den bisherigen Anwendungsgebieten zugrundeliegen, und die Erfolgsaussichten weitere Entwicklungen untersucht. AbstractMethyl α‐eleostearate dissolved in pentane was stored at room temperature in the darkness. The low molecular weight products formed were compared with those resulting form reductive ozonolysis of methyl α‐eleostearate. Pentanal, 2(E)‐heptenal, 2(E),4(E)‐nonadienal, methyl 9‐oxononanoate, methyl 11‐oxo‐9(Z)‐undecenoate and methyl 13‐oxo‐9(Z), 11(E)‐tridecadienoate were formed in both processes. AbstractThis investigation has been carried out to study the effect of ultrasound on the rate of hydrogenation of sunflower oil. Tow types of catalysts were used, namely the Harshaw' Nysel DM 3 and the second one produced by the inland STZ works. The application of ultrasound increased the reaction rate by 30 to 70 per cent while keeping a sufficiently high level of selectivity. AbstractBienenwachs, ein Stoffwechselprodukt der HonigbieneApis mellificaist das älteste von Menschen genutzte Naturwachs. Seine Zusammensetzung ist heute weitgehend bekannt. 70–80% des Bienenwachses sind Fettsäure und Hydroxyfettsäureester höherer Alkohole, 10–15% freie Fettsäuren und 10‐2‐20% Kohlenwasserstoffe. Mittels Gaschromatographie können ca. 65% des nicht hydrolysierten Waches erfaßt werden. Die restlichen 35% stellen im wesentlichen schwer flüchtige Di‐ und Triester dar. Ein vollständiges Bild ergibt die gaschromatographische Analyse einer hydrolysierten und silylierten Wachsprobe, bei der alle Bestandteile bzw. deren Hydrolyseprodukte getrennt werden. AbstractRefined sunflower oil was stored in brown and colorless glass bottles at ambient temperature (18–32°C) and 37°C to assess the effect of light, heat and air on the stability fo the oil and to record the progress of oxidative rancidity especially the secondary stages with respect to storage variation and time. Oil sample stored in brown color bottle was found to be superior (FFA 0.15 to 0.53; PV 0.5 to 80; HV 3 to 12; oxirane oxygen 0.2 to 2.3) over oil stored in colorless bottle (FFA 0.15 to 0.60; PV 0.5 to 91; HV 3 to 8; oxirane oxygen 0.1 to 2.8) at ambient temperature. Samples stored at 37°C deteriorated very fast. Silver nitrate test, oxidised fatty acid formation, urea adduct formation, picric acid‐TLC test,Kreistest, DNP‐TLC test, DNP‐precipitation test have been devised to detect and follow oxidative rancidity. These tests worked well even at the lower levels of oxycompounds. No conjugation was detected in any
