AbstractThe polymorphic behaviour of a 50/50 blend of tripalmitin and tristearin has been investigated in detail using differential scanning calorimetry and X‐ray diffraction. The blend is characterized by a greater tendency to β'‐crystallization as compared to the pure triglycerides. Tripalmitin and tristearin, when mixed in a 1:1 ratio, are miscible in both the α‐form and the β‐form. In the β‐form, however, demixing occurs, resulting in a 2‐phase solid state. The characteristics of the α‐form are considerably affected by the crystallization conditions, due to the formation of concentration gradients during crystallization. The β'‐form can be obtained from the melt as well as via recrystallization of the α‐form, and is characterized by a much higher stability as compared to the pure triglycerides. The X‐ray diffraction data of the β'‐form of the blend reveal a β1‐crystal structure. The β'‐form of the pure triglycerides, however, is characterized by a β'2‐crystal structure. AbstractDas Fett der Samen vonFevillea cordifolia(Cucurbitaceae) wurde unter Ausschluß von Sauerstoff und Licht extrahiert, und durch13C‐NMR hinsichtlich der ungesättigten Säuren charakterisiert. Mittels HPLC wurde das Gesamtfett getrennt, wobei eine Hauptfraktion (˜45% Anteil), eine mittlere Fraktion (˜ 18%) und mehrere Nebenfraktionen anfielen und in allen wesentlichen Fraktionen ein konjugierter Trien‐Chromophor nachweisbar war. Wie die MS‐Analyse zeigt, handelt es sich bei der Hauptfraktion um Distearyleleostearylglycerid. Umesterung des Fettes ergab das Gemisch der Fettsäuremethylester, die wir sowohl direkt als auch nach HPLC‐Trennung gaschromatographisch analysiert haben. Hauptfettsäuren im Samenfett vonF. cordifoliasind Stearinsäure mit 53% und die dreifach‐konjugiert ungesättigte α‐Eleostearinsäure mit 31%. AbstractDie Tocopherole α‐T, γ‐T, δ‐T sowie Ascorbylpalmitat (AP) werden in unterschiedlichen Kombinationen einem Sonnenblumenöl zugesetzt, dessen natürlicher Tocopherolgehalt bekannt ist. Um den Einfluß dieser Zusätze auf die Oxidationsstabilität des Öles zu bestimmen, wurden die Induktionszeiten unter Standardbedingungen gemessen. Diese Messungen wurden nach der „Response Surface Method”︁ geplant und die gewonnenen Rohdaten der gemessenen Induktionszeiten mit dem SAS‐Programm einer multiplen Regressionsanalyse unterzogen. Die optimierte Regressionsgleichung, auf hinreichende Güte der Anpassung varianzanalytisch geprüft, gestattet die dreidimensionale, graphische Darstellung der Untersuchungsergebnisse und erleichtert somit die Bewertung der Einflußgrößen auf die Oxidati

AbstractThe action of pancreatic lipase on complex glyceridic molecules originating during thermal oxidation of fats is defined. Four samples of increasing level of alteration compounds – 4.5, 37.1, 67.2 and 100% respectively – have been analyzed by means of a combination of chromatographic techniques, which allows quantification of the most representative groups of degradation compounds – oxidized triacylglycerol monomers, triacylglycerol dimers and polymers, diacylglycerols and fatty acids. The samples have been subjected toin vitrohydrolysis by pancreatic lipase at different reaction times and modifications originated have been defined by means of high performance size exclusion chromatography (HPSEC) as well as by titration of fatty acids released. The results clearly demonstrate that enzymatic hydrolysis depends on the molecular weight of the glycerides being slower as alteration compound weight increases. AbstractThe degumming of vegetable oils prior to physical refining is a crucial preliminary step. The degumming process is not only largely responsible for the quality of the final product, but it also determines the amount of bleaching earth to be used, which has a substantial effect on the yield improvement which can be attained by this route. Investigations show clearly that iron, as a pro‐oxidant, strongly influences the stability of refined oils, and that oil, degummed before bleaching and physical refining, may contain a maximum of 0.2 ppm Fe, if it is to yield a stable product. The Total Degumming Process has been developed on the basis of these findings, to make it possible to degum oil to a residual Fe‐level below 0.2 ppm and a residual phosphorus content below 10 ppm. The principles and industrial application of the process have been considered. The results of industrial production using different raw materials of various qualities have been used to make a comparison between the conventional refining process (neutralization – bleaching – deodorization) and the Total Degumming Process in combination with physical refining.
