AbstractInsbesondere nach lipasekatalysierter Umesterung verbleiben größere Mengen an Diglyceriden im Fett. Die Auswertung vorliegender Arbeiten ergibt, daß Diglyceride die Kristallisationseigenschaften von Fetten beeinflussen können. Dabei scheinen 1,3(2,3)‐Diglyceride Phasenumwandlungsgeschwindigkeiten stärker zu verändern als die isomeren 1,3‐Diglyceride. Bisherige Untersuchungen konzentrierten sich dabei insbesondere auf die Phasenübergänge α → β′ von Palmöl und Salfett sowie β′ → β von hydriertem Rapsöl. AbstractSoybean breeding has traditionally focused on improving crop productivity. While this is still the main objective of soybean breeding programs, there is increased emphasis on improving the intrinsic characteristics of the seeds. Breeding goals with respect to oil quality improvement have been threefold: (1) reducing lipoxygenase activity, (2) decreasing linolenic acid concentrations in soybean oil and more recently (3) reducing the saturated fatty acid, palmitate, in soybean oil. The first two are aimed at improving oil flavor and shelf life. The third has been added as a result of medical concerns about excess saturated fats in the human diet. Considerable progress has been made toward achieving all three objectives. Improved soybean germplasm has been released and is being used to develop high yielding cultivars improved oil quality. Null alleles for three lipoxygenase isozymes have been transferred into the cultivar ‘Century’ through backcrossing. Three different germplasm sources have been developed through mutagenesis and selection with low concentrations of linolenic acid (3.0 to 3.5%). This material has been released and is being widely used by public and private breeders to incorporate the low linolenic acid trait into high yielding cultivars. Cultivars with 2% germplasm with lower concentrations of palmitic acid in soybean oil by as much as 50%. In the U.S., soybean oil accounts for about 50% of the palmitic acid in diets. Therefore, reducing palmitic acid in soybean oil could significantly decrease saturated fat consumption without dietary change. AbstractDurch metabolische Aktivierung können im Organismus Fremdstoffradikale entstehen, die dadurch toxisch sein können, daß sie mit Sauerstoff reagieren. Die gebildeten Sauerstoffradikale reagieren dann mit zellulären Makromolekülen. Bei der Reaktion mit Lipiden kommt es zur Lipidperoxidation. Antioxidantien können entweder die Bildung der Sauerstoffradikale verhindern oder die Lipidperoxidation hemmen. Als Beispiele werden Tetrachlorkohlenstoff, Adriamycin, Paraquat und einige Kanzerogene abgehandelt. Bei einigen wird sowohl die Toxizität als auch die Lipidperoxidation durch Vitamin E und andere Antioxidantien gehemmt. Diskutiert wird auch die Toxikologie der Antioxidantien, da sie selbst auch in freie Radikale übergeführt werden. AbstractThe presence of sulfur compounds in canola oil is mainly responsible for nickel catalyst poisoning during hydrogenation. In this study, different adsorbents (alumina, alumina‐silicate, diatomaceous silica and silica gel) were used in conjunction with different bleaching earths (AOCS official natural bleaching earth, G 160 from Harshaw‐Filtrol and montmorillonite K 10 from Aldrich Chemical Co.) to remove the three types of sulfur compounds [total sulfur(TS), Raney nickel sulfur (RS) and volatile sulfur (VS)] from canola oil. The TS content of the oil was not affected during bleaching. The AOCS bleaching earth removed 28.6‐36.4% RS and 57.8–78.9% VS in the bleaching temperature range of 120–150°C. The some bleaching earth, in combination with 6% TriSyl (micronized silicon dioxide adsorbent) 45.7–81.4% RS and 73.3‐95.6% VS were successfully removed. TriSyl also improved the chlorophyll content and color of the oil bleached at 120°C. Bleaching at 120°C with G 160 and K 10 removed 44 and 81%%RS and 69 and 61% VS respectively. These two bleaching earths, in combination with alumina, alumina‐silicate, diatomaceous silica or silica gel did not further improve the removal of all the three types of sulfur

AbstractSeit einigen Jahren werden Konzepte zur fermentativen Gewinnung von Aromastoffen erarbeitet. AbstractDeodorization as applied to edible oils, is a refining step meant to eliminate odoriferous matters by distillation. There are a multitude of components imparting disagreable taste and flavour to crude oils; most of these have been identified by capillary gas chromatography of the head space. These products are partially removed in refining stages prior to deodorizing. Certain odoriferous substances in infinitesimal proportions are tenacious and most intimately linked to the glyceride. These are the ones that give to each oil its characteristic flavour. The consumer is generally most demanding and will not tolerate any flavour and still less any aftertaste in the refined oil. This is why deodorization of edible oils in a refining line is of the utmost importance and should be carried out under optimum conditions and with an adequate equipment. The discerning use of the live steam which is the stripping media during deodorization‐distillation, acceptable heat recovery, minimum level of pollutants in the effluent streams and the flexibility and reliability of operation should be the main features of a modern deodorizer. AbstractFettsäuren mit verzweigten C‐Ketten wurden in Lipiden unterschiedlicher Organismenklassen gefunden. Am Beispiel eindeutig definierter total‐ bzw. partialsynthetischer Glycerophospholipide wurde der Einfluß einer Verzweigung im Fettsäureanteil auf das biophysikalische und biochemische Verhalten dieser Lecithine systematisch untersucht. Zu diesem Zweck wurden Fettsäuren (Palmitin‐, z. T. AbstractCommercially processed seeds and solvent extraction products of low and high glucosinolate rapeseed were analysed from the point of view of sulphur distribution. Glucosinolate and sulphur content were analysed in seeds, while in oils, miscellas and solvents of both varieties sulphur content were determined by tow ‐ the Raney nickel and combustion ‐ procedures. In comparison to traditional rapeseed variety, commercially processed seeds of winter double zero variety contain about 60–70% less of glucosinolates and only 40% less of sulphur.
