AbstractThe effect of high hydrostatic pressure to milk fat in the emulsified state has been studied by transmission election microscopy (TEM) and low resolution pulsed nuclear magnetic resonance (NMR) for the purpose of following pressure‐induced crystallization processes. Pasteurized dairy creams (35 and 43% fat) were subjected to pressures between 100 and 500 MPa for 1 to 15 minutes at a temperature of 23°C. By applying the freeze fracture technique for TEM studies it was demonstrated that pressurization induces fat crystallization within the emulsion droplets, predominantly at the globule periphery. The ultrastructural findings were confirmed by NMR which showed that the amount of crystallized fat formed depended both on intensity and time of pressurization. In the pressurized cream samples the crystallization proceeded during further storage at 23°C whereas the fat droplets in the original cream sample remained liquid under these conditions, provided that the cream sample was held at this temperat

AbstractThe activity A of antioxidants, representing a ratio between the stabilization factor F and the decrease in oxidation rate after the introduction of an inhibitor DOR (A = F/DOR) is proposed for a complex estimation of the effect of antioxidants. The specific changes in F, DOR and A are discussed in association with the participation of the inhibitor molecule and the radical formed from it in the different reactions of initiation and propagation of the chains. Several types of antioxidants (α‐tocopherol, ferulic acid, BHT and BHA) in concentrations ranging from 0.02 – 0.20 wt% are investigated during the oxidation of lard at 100°C. AbstractThe solvent crystallization and the urea complexation of the Uruguayan fur seal oil (Arctocephalus australisZim.), in order to obtain enriched omega‐3 PUFAs concentrates were studied. The fractionation at –6°C of fur seal oil or its fatty acids dissolved in ethanol or acetone, is not suitable to obtain a PUFAs concentrate. Ethanol as a solvent and a two steps process (the second step consists of the addition of urea to the obtained NUCF) is the most useful procedure to obtain a concentrate of high PUFAs content using urea complexation of the free fatty acids from marine oils. When the concentrate is obtained from fur seal fatty acids, the total PUFAs content is of 90% with an overall yield of 17%. The recovery efficiency of total PUFAs is 78%. AbstractRaffination of edible oils and fats, i.e. bleaching with earth or charcoal as well as deodoration, can be determined by the analysis of dehydroxylation products of sterols and isomerization products of squalene. These olefinic degradation products are isolated from the rest of the oil by LC on silica gel and on‐line transfer to GC. Sample preparation consists of preparing a 20% solution of the oil. AbstractNatronlauge ist eine der am vielseitigsten verwendeten Substanzen. Unter anderem wird NaOH in der chemischen Raffination (d. h. Reinigung von Fetten und Ölen), in der Seifenfabrikation und in der Getränkeindustrie für die Flaschenreinigung eingesetzt. Weltweit wird der größte Anteil der produzierten Natronlauge durch Chloralkalielektrolyse hergestellt, d. h. es entstehen 890 Gramm Chlorgas pro erzeugtem kg NaOH. Neuere Umweltschutzbestimmungen und geringe Akzeptanz von chlorhaltigen Produkten führen zu einem kleineren Chlorbedarf. Als Konsequenz ist die Natronlaugeverknappung unausweichlich. KREBS SWISS befaßt sich seit einiger Zeit mit einem neuen Membranverfahren für die Rückgewinnung von Natronlauge, welches auf einer Ultrafiltration bzw. Nanofiltration beruht. Es werden sowohl die Einsatzmöglichkeiten vorgestellt als auch die Anwendungen aufgelistet, bei denen sich das Verfahren eignet.
