AbstractDie indirekte Bestimmung des Gesamt‐Glucosinolatgehaltes von Rapssamen und ‐schroten über das aus den Glucosinolaten freigesetzte Sulfat‐Anion ist eine interessante Alternative zu den gängigen Glucosinolat‐Bestimmungsmethoden. Während der Gesamt‐Sulfatgehalt immer dem Gesamt‐Glucosinolatgehalt der Samenzum Zeitpunkt der Ernteentspricht, ist der Anteil an freiem Sulfat ein Maß für bereits abgebaute Glucosinolate. Auf diese Weise lassen sich Bilanzen in Rapssamen und Schroten aufstellen. Glucosinolate können während der Trocknung oder Analyse entweder enzymatisch durch Myrosinase oder thermisch durch Hitzeeinwirkung abgebaut werden. Darüber hinaus erfolgt ein Abbau auch stets bei der Rapsverarbeitung in einer Ölmühle. Das resultierende Schrot enthält nur noch einen wechselnden Anteil an intakten Glucosinolaten. AbstractSupercritical carbon dioxide (SC‐CO2) successfully extracted triglycerides from crude Shea nut oil (Butyrospermum parkii) at temperatures of 40–80°C and pressures of 100–400 bar. Selective removal of free fatty acid, mono‐ and di‐glycerides, iron, triterpene acetates, triterpene cinnamates and polyisoprenoid gum from triglyceride was achieved by varying the solvent power of the SC‐CO2. Triglyceride so produced had a higher stability to oxidation than the crude oil. Polyisoprenoid gum was essentially insoluble in SC‐CO2. AbstractThe formation and properties of the fluorescent compounds originated in the browning reactions of phospholipids have been investigated. The compounds exhibited fluorescence with excitation maximum 345–350 nm and emission maximum at 420–430 nm, which were similar to those of lipofuscin and fluorescent substances derived from the reaction of oxidized fatty acids with glutathione. The fluorescence of the compound was affected neither with the pH 2–11 nor by treatment with sodium borohydride. The fluorescent compounds formed in the browning reaction of peroxidized phosphatidylethanolamine are produced, mainly, by interaction of the amine group of phosphatidylethanolamine and saturated aldehydes produced through the decomposition of fatty acid hydroperoxides of phosphatidylethanolamine. AbstractThe free fatty acid (FFA) content of anchovy oil and the residual lipids in anchovy meal were studied as a function of the length and temperature of the delay between catching and processing the fish. It was found that there was a marked increase in the FFA content of the press oil and the residual meal lipids as a result of increased‐delay between catching and processing. It was also found that — other things being equal — lean anchovy yielded oils with higher FFA values than fatty anchovy. AbstractIn einer doppelblinden klinisch prospektiven Studie wurde die antiphlogistische/analgetische Wirkung von Vitamin E (300 I.E. pro Tag) und Diclofenac‐Natrium (75 mg pro Tag) sowie einer Kombination dieser beiden Substanzen miteinander verglichen. Bei allen wesentlichen Parametern wie Gelenkschwellung, Schmerz undKeitel‐Funktionstest kam es zu signifikanten Verbesserungen im Vergleich zum Aufnahmestatus. Zwischen den Behandlungsgruppen konnten keine signifikanten Unterschiede im Schweregrad der Schwellung, dem Ruheschmerz sowie imKeitel‐Funktionstest festgestellt werden. Druckschmerz und Bewegungsschmerz wurden in der Diclofenac‐ sowie der Kombinationsgruppe deutlicher gesenkt als in der Vitamin E‐Gruppe. In der Kombination von Vitamin E mit Diclofenac konnte keine additive Wirksamkeit beobachtet werden, was auf die in der Studie verwendete relativ niedrige Dosierung von Vitamin E zurückgeführt werden kann. Die Studie bestätigt erneut, daß Vitamin E als risikoarme Therapiemöglichkeit von Erkrankungen des rheumatischen Formenkreises eine gute Wirks

AbstractDie häufigste Ursache für das Verderben von Fetten und Ölen ist eine chemische Reaktion der in ungesättigten Fettsäuren enthaltenen Doppelbindungen mit dem Luftsauerstoff. Im Verlauf der Autoxidation schädigen intermediär gebildete Peroxide oxidationsempfindliche Vitamine und senken den Gehalt der physiologisch wertvollen essentiellen Fettsäuren. Die Oxidationsstabilität von Ölen und Fetten hängt sowohl vom natürlichen Tocopherolgehalt als auch von der Fettsäurezusammensetzung ab. Die Wirkung zugesetzter Tocopherole ist daher abhangig vom natürlichen Tocopherolgehalt. Lipide mit niedrigen Gehalten sind mit tocopherolhaltigen Antioxidantien sehr gut zu stabilisieren. Hierzu zählen vor allem tierische Fette sowie synthetisch hergestellte Lipide, die besonders in der Kosmetikindustrie und im Pharmabereich, aber auch in der Lebensmittelindustrie eingesetzt werden. Pflanzenöle enthalten von Natur aus hohe Gehalte an Tocopherolen. Da diese bei der Raffination und während der Lagerung teilweise entfernt oder oxidiert werden, ist auch hier der Einsatz von tocopherolhaltigen Antioxidantien sinnvoll. AbstractA few deep fat fried products of Indian taste were either prepared in the laboratory in heat‐abused groundnut oil or collected from commercial establishments along with corresponding frying oils. Quality of lipid extracted from different products or that of frying oils was assessed through different determinations. The study indicates that the quality of the lipid or the fat of a deep fat fried product is governed by the quality of its frying oil; however, both are not same. The study brings out the significance of moisture content of a product in determining the quality of lipid picked up by it from frying oil. When the moisture content of a product is high (45% or more), the quality of its lipid is inferior to that of its frying oil. When the moisture content is low (10% or less), the reverse is the situation. Difference between total lipid and crude fat of a product calculated on moisture free basis is found to be more pronounced in case of products having high moisture contents compared to those having low moisture contents. Products with low moisture content have relatively higher percentage and those with high moisture content, have lower percentage of „bound”
