A study was conducted to compare selected biochemical variables in 80 non-institutionalized retired citizens relative to supplemental vitamin E intake, sex and age. No low levels of either serum tocopherol or serum retinol existed in any of the subjects, whereas high levels were present in both the supplemental and non-supplemental vitamin E population. The supplemental vitamin E group had a significantly higher mean serum tocopherol level than the non-supplemental E group. In the subjects who took vitamin E supplements, positive correlations were observed between serum tocopherol and the parameters of total serum lipids, serum carotene and serum retinol and between serum retinol and total serum lipids. In the non-supplemental vitamin E subjects, serum tocopherol was related to total serum lipids. In both groups, mean levels of total serum lipids were higher in men than women, with a significant difference in the non-supplemental group. The younger age (58 to 70 years) group taking vitamin E supplements tended to have higher serum levels of tocopherol, total lipids and carotene than the older age (71 to 88 years) group.

摘要:
The purpose of this study was to examine the nutrient intake of elderly Hispanic and Caucasians in the urban Southwest. The result showed that the Hispanics had intakes of calories, thiamin and ascorbic acid that were significantly lower than that of the Caucasians. In additions, there were differences for either sex between the two groups. The Caucasian females consumed a greater amount of iron than the Hispanic females. The Caucasian males consumed a greater amount of calcium, vitamin A and riboflavin than the Hispanic males. Thiamin, calcium, and calorie intakes were significantly below the RDA for both groups. Contrary to some other studies, the subjects of this study were not deficient in their intakes of vitamin A and ascorbic acid. This may have been due to seasonal availability of foods high in these two nutrients. The observed differences between the two ethnic groups may be due to cultural food patterns. This aspect requires further investigation.

摘要:
Congregate meals programs improve the lives of those elderly persons who need the most assistance. This study indicated low scores on nutrition knowledge for persons of the working and lower classes, those who eat alone, and those with low food intake away from the center. The same persons also shopped either daily or monthly, neither of which are efficient ways to buy food for economy and freshness. The noon meal at the center helped to provide a balanced diet, a chance to meet new friends, and a sense of well-being.

A study was conducted on the role functions of nursing home dietitians in New York State to ascertain and compare levels of agreement among dietitians and administrators on role performance. Role functions for dietitians practicing in this setting were developed by a panel of experts and three questionnaires were used to measure role perceptions by 125 dietary consultants, 200 full-time dietitians, and 210 administrators. Forty-seven role functions were categorized to determine how dietitians allocated their time to six major role segments: diet therapy and counseling, education and training, interdepartmental communications, interpretation and evaluation, nutrition assessment, and organization and management. All three groups indicated the dietitian's role to be primarily a clinical one.
