An experiment explored how well young, middleaged, and elderly subjects could discriminate the presence or absence of the spice marjoram in a soup prepared according to a published recipe. Whereas most young made the discrimination at a level above chance, most middle-aged and elderly failcd to. A clinical test that entails odor threshold and identification revealed that olfactory ability also diminished with age among these subjects. Furthermore, the odor thresholds measured in the test correlated significantly with the subjects' ability to discriminate flavor. Subsequent testing wherein subjects sought to discriminate flavor with their noses blocked confirmed that olfactory ability largely undcrlay the discrimination. The results emphasize that losses in olfaction measured most commonly with environmental odors are serious enough to have an impact on discrimination of flavors in everyday foods, even among persons of middle age. Loss of such discriminative capacity may entail risks of avoiding dangerous and ovcrlooking beneficial ingredients in foods.

A content analysis recently identified twenty foodbuying principles as the most commonly cited in consumer education textbooks of the 1980s. This study examines the behavior science literature in an effort to assess the ability of older consumers to practice these principles in American supermarkets. The study identifies three types of principles differing in the consumer behaviors they recommend as well as the nature and strength of the support they receive in the behavioral science literature. Implications of the study findings are drawn for gerontological research and educational practice.

A survey on heart health knowledge was administered to 180 congregate meal participants at ten sites in two upslate New York counties. Respondents had rela,tively high awareness of the risks of cigarette smoking and high blood pressure, as well as of the dietary recommendations for lowering blood pressure levels. ' There was marked misinformation about dietary approaches lo lowering blood cholesterol levels. Assessment of the heart-healthy illtributes of 20 congregate meals served over a bur-week period ICvealed that the mean percentages of fat calories were 3610 and 38% in both counties. In one county, mean sodium intake per me211 among 20 meals was 1900 mg, ranging from 955-2799 mg.

In a question and answer format, frequent clinical and food production problems that occur in long term care facilities are addressed. Subject matter includes the handling of food complaints, accommodating food preferences, maintaining safe food temperatures despite a wide variety of food 'consistencies, accommodating a resident's small appetite and maintaining the n"tritiona1 adequaw of the puree diet. The emphasis is on simplified food production hhich uiilizes menu items ihat fit many dikt consistendies. Various tested solutions to these problems are offered. The authors welcome additional questions.
