If anthropometric data is to be collected from elderly persons regardless of their mobility status, new methodologies are needed, but these methods must be accurate, replicable and provide relevant information in regard to body stores of muscle and fat. Inter-observer replicability for recumbent measurements collected from ambulatory and non-ambulatory elderly adults are slightly larger than corresponding values for standard measurements collected from ambulatory elderly persons, but less so for standard measurements collected from non-ambulatory elderly persons. Accurate recumbent nutritional anthropometric data can be collected from ambulatory and non-ambulatory elderly persons.

As it is with most elderly people, traditional Cuban eating patterns provide a sense of psycho-social well being. Immigration has modified many of these eating habits, with a resultant loss of comfort and security. Health care givers need to recognize that the meaning, value and structure of eating behaviors can only be understood within the context of people's culture.

摘要:

The On Lok model of community-based long-term care is unique for its large ethnic population and alternative service delivery system. Among On Lok's population psychosocial, cultural, and physiological factors have been found to influence food consumption. On Lok addresses psychosocial dietary problems through congregate meals, recreation therapy and counseling. Culturally adaptive foods and seasoning improve the acceptability of meals and awareness of cultural influences is used in meal planning and diet counseling. To compensate for aging-related physiological changes, home-delivered meals and home health aides are utilized. Dietary reinforcement comes from all members of the multidisciplinary team as well as family members.
