摘要:
The dietary intake and factors relating to the dietary intake of 100 noninstitutionalized individuals age 65 and older was assessed. Although mean nutrient intakes for the group were considered adequate, two-thirds of the individual diets were rated inadequate with calcium and vitamin A most likely to be below 67% of the RDA. Vitamin and/or mineral supplementation or total food energy intake had the greatest influence on dietary adequacy while social, economic, and health factors had only a slight influence.

摘要:
A method to measure food perceptions among the elderly was developed using focus group and Q-sort methodologies. The 78 elderly participants responded favorably to the method which resembled a card game. The strongest perceptions of food as quantified using factor analysis were the expense of the food and the health promoting qualities. Convenience and health promoting qualities of food were positively related to consumption while expense was negatively related to food consumption.

摘要:
Results on sources of sodium intake in diets of elderly populations were reviewed and accompanied by an examination of previously unreported results on dietary sources of sodium. Results from NFCS, NHANES I, NHANES II and this study showed average sodium intake levels (excluding discretionary salt) were in the range of 2,00 to 2,900 mg/day. Assessment of data from three sources strongly indicated that grain products were the major source of sodium in elderly individuals' diets. Meats and mixed protein dishes and milk and milk products were identified as two other food categories contributing large portions of sodium to diets. Individuals who were identified as having had greater than average daily sodium consumption intakes had the same principal food sources of sodium. Their increased sodium intakes were attributed to increased intake of all foods and to heavier usage of condiments, sauces and dips, and salted snack foods.

摘要:
Anthropometry is an important part of a nutritional assessment, but for many elderly persons who are not ambulatory, collecting standard anthropometric data is difficult. This report provides a methodology for collecting "recumbent" anthropometric data that removes the effect of an elderly person's mobility status on a nutritional assessment. Techniques and sex-specific reference data are presented for recumbent measures of midarm and calf circumference, and triceps and subscapular skinfolds plus stature and weight for elderly persons 65 to 90 years of age.
