摘要:
As part of a study evaluating the accuracy of dietary intake data from telephoned 24-hour dietary recalls, an attempt was made to predict, on the basis of their health, social, demographic and dietary characteristics, which subjects would provide data containing the greatest error. Unexpectedly, the statistical model for the overall error score was predictive of smaller rather than larger errors. All variables it contained were reasons why an individual might have a heightened awareness of their food consumption. Work should be undertaken to determine whether this model also has predictive ability in face-to-face dietary interview settings and with non-elderly subjects.

This study explored the learning styles of older adult females (65 + years) as compared to younger adult females (35-55 years) in the areas of immediate environment, emotionality, sociological needs and physical needs. At recreation community centers, 80 subjects were selected on a non-random basis, with one-half falling in each age category. Each subject was individually questioned using the Productivity Environmental Preference Survey, which analyzes a personal preference for each of 20 elements and identifies how adults prefer to function, learn, concentrate and perform in their educational or occupational activities. An analysis byttest showed a significant difference between the two groups in the elements of light, learning alone-peer oriented, authority figures present, and evening-morning. When the elements were combined and treated by discriminant analysis, most of these findings were confirmed, showing a significant difference in five elements; light, motivation, responsibility, learning alone-peer oriented, evening- morning. These findings might be useful to nutrition educators when developing nutrition programs for the elderly.

Nurses practicing in long-term care facilities were surveyed on the adequacy of their nutrition education, nutrition knowledge, and general attitudes about the diet of elderly residents. While 78% of the 95 responding nurses reported taking a required nutrition course during their training, only 61% indicated the quantity of their nutrition education was sufficient and 66% indicated the quality of their education was sufficient. The mean nutrition knowledge score was 60% correct with 51 subjects scoring at this level or less. Since the nurse is such an important caregiver for the institutionalized elderly it is recommended that more emphasis be placed upon nutrition of the elderly in the nurses' education as well as the provision of more inservice training for practicing nurses utilizing the registered dietitian.

This study assessed the change in nutritional intake and status of 15 nursing home residents receiving a pureed diet along with commercial supplements over a 6 month period. The nutritional supplements were well accepted with a significant increase in the energy and nutrient intake after their addition. Gastrointestinal distress was measured by stool size and number. The mean number of stools increased over the 6 month period with the stool sizes remaining relatively the same. Decubitus status was monitored and seven of the ten residents who had some form of decubiti demonstrated signs of complete or partial healing. After three and six months of supplementation hematocrit and serum albumin levels significantly increased.
