ABSTRACT.Mechanically deboned chicken meat (MDCM) from necks and backs was treated with 0–2% ground mustard seed (GMS) as well as its aqueous or methanolic extracts. GMS inhibited lipid oxidation of cooked MDCM during a 20‐day storage period as reflected in the 2‐thiobarbituric acid (TBA) values. The TBA values of meat samples were reduced by 75, 94, 97 and 98% using 0.5, 1.0, 1.5 and 2.0% GMS, respectively. Extracts of GMS were somewhat less effective and their activity was directly proportional to the content of phenolics present. ABSTRACT.Alpha‐tocopherol was the only one among the four (alpha, beta, gamma and delta) tocopherols which could be detected in farmedMytilus edulis(blue mussels) sampled from Ship Harbour, Nova Scotia, in the summers of 1989 and 1990. The α‐tocopherol when determined as the content of mussel meat was found to vary somewhat with sampling time but was typically between 4 and 12 μg/g mussel meat. It was observed, on a meat basis, to decrease during the midsummer spawning period as triacylglycerol‐rich gametes were released. Thus for most of the year it was presumably at a higher level in the gonads than in the rest of the body, and higher in females than males. Lipid was in the range of 1–2% of mussel meat and α‐tocopherol proportion relative to lipid and highly unsaturated fatty acids is comparable to other fishery products and favourable in terms of current health concepts of benefits from highly unsaturated fatty acids of m

ABSTRACT.Flaxseed meal was extracted with 95% ethanol at 80C. The extract was separated on a Sephadex LH‐20 column using methanol as eluate. Four major fractions according to their absorbances at 280 nm were separated. The antioxidant effect of these fractions in a β‐carotene‐linoleate system indicated that fraction I was most active. ABSTRACT.Anhydrous butter oil was modified by acetone or n‐hexane crystallization (10–20% w/w) over a temperature range of 29–17C without agitation, producing solid fractions with higher proportions of C44–C54 triacylglycerols vis‐a‐vis fractions obtained by classical thermal modification of butter oil. Similarly, recrystal‐lization of a mixture of thermally isolated butter oil solids (S.25–S. 17C) in organic solvents at various temperatures yielded butter lipid fractions with significantly distinct chemical and physical properties. These lipid fractions showed to contain higher and lower proportions of C44–C54 and C26–C36 triacylglycerol respectively vis‐a‐vis solid fractions isolated via thermal modification of butter oil in organic solvents as the starting material(S.25–S. 17C) contained more of the former and less of the latter triacylglycerols than butter oil.Extraction of low molecular weight lipidsfrom solid fractions obtained by classic thermal modification of butter oil using acetone left a white powderous lipid which produced one sharp melting peak (53 C) in its DSC thermogram. The acetone treated fraction was enriched in C44–C52 triacylglycerols with a 2 to 6‐fold reduction in C4–C10 fatty acids content.Recrystallization of a mixture of solid butter fractions isolated according to classical procedures at 29–21 C, over a temperature range of 35–21 C, yielded discrete fractions with profound differences in fatty acid and triacylglycerol profiles havin

ABSTRACT.Investigations of the Greenland Eskimo diet and disease patterns has led to important discoveries on the role of n‐3 polyunsaturated fatty acids (PUFA) in the regulation of plasma lipid levels and the production of eicosanoids derived from the n‐6 PUFA, arachidonic acid (AA). As a result of these findings, recommendations have been made for western countries to increase their dietary intake of n‐3 PUFA, with the aim being to decrease the tissue level of AA and to increase that of the n‐3 PUFA. Studies on traditional foods in the hunter‐gatherer diet eaten by Australia Aborigines have shown that both AA and the n‐3 PUFA were significant components of the dietary fatty acids and that tissue fatty acid patterns reflected dietary intake. The significance of the raised AA levels in plasma and tissue phospholipids which occurred in association with raised n‐3 PUFA levels is discussed in relation to current theories.
