AbstractThe effect of rice and salty rice diets on stomach morphology was investigated in Swiss/ICR mice. Mice were fed rice, salty rice, or standard pellet diets for 3–12 months, starting when the mice were 4 weeks of age. Long‐term maintenance on the rice or salty rice diet increased the dimension and wet weight of the forestomach and decreased the same parameters of the glandular stomach. Similar bidirectional changes of the forestomach (hypertrophy) and glandular stomach (atrophy) were produced by hydrocortisone treatment. Histological study showed that a reduction in the parietal cell population accounted for the regression of the glandular stomach in both cases. Evidence is presented to suggest that an excess of carbohydrate and sodium chloride combined with a deficiency of fat and protein produced steroidal disorders that in turn gave rise to hyperplasia of the forestomach and atrophy of the glandular stomach of the mice. Possible impact of the above findings on the genesis of human gastric cancer is discussed in relation to the metabolic competence of the host animals to synthesize vitamin C. AbstractLevels of secondary and primary amines in various squids and other seafoods were determined by the newly developed dabsylation‐HPLC method. Ammonia and dimethylamine were found in all of the seafoods analyzed, and some of them also contained methylamine, isobutylamine, ethylamine, and/or diethylamine. Extremely high levels of dimethylamine and methylamine were detected in all squids analyzed and in certain other seafoods. Very high activity of trimethylamine oxidase was observed in fresh squid tissue. Pyrolysis of sarcosine HCl and trimethylamine HCl yielded high levels of dimethylamine and methylamine. Various cooking conditions (extracting, frying, and broiling) had profound effects on amine content. Broiling was found to elevate the amine contents in most seafoods. (Nutr Cancer 6,148–159, 1984)

AbstractThe relationship between dietary factors and mortality from colon cancer was explored by an analysis of the correlation between age‐adjusted colon cancer death rates for men in 38 countries and estimates of the availability of a number of dietary components. Cereals were the only source of fiber found to be negatively associated with colon cancer mortality after adjustment for the availability of total or animal fats, or total or red meats, foods that were themselves positively associated with mortality. The estimate of dietary fiber from cereals was more closely associated with mortality than that of crude fiber. The previously postulated protective effects of vitamins C and A and of cruciferous vegetables were not supported by the international data; we found no evidence of a negative association between colon cancer mortality and availability of these dietary factors. The positive association previously reported between colon cancer and beer consumption disappeared following adjustment for animal fat. (Nutr Cancer 6, 160–170, 1984)

AbstractIn a search for possible sources of mutagens in human foods, astudy was made of six common foods in the diet of a population at high risk for gastric cancer (in Nariño, Colombia). No mutagenic activity was demonstrated in nonnitrosated foods. After nitrosation, only one of the foods, fava beans, demonstrated a mutagenic effect. AbstractThe activities of aspartate aminotransferase and alanine aminotransferase in erythrocytes with and without the addition of pyridoxal phosphate were determined in healthy controls and in Indian women with cancer of the uterine cervix. The percent stimulation of the erythrocyte transferases as a result of the addition of pyridoxal phosphate was negligible in the case of normal subjects (less than 5% stimulation). In the patients with cervical cancer, a 23–35% stimulation was observed, indicating a deficiency of vitamin Bs. It is not yet known whether the deficiency is the cause of the disease or due to the tumor. (Nutr Cancer 6, 176–180, 1984)

AbstractThe metabolism of 1,2‐dimethylhydrazine (DMH) was investigated in isolated perfused livers excised from Sprague‐Dawley rats fed four semisynthetic diets over two generations. The diets were varied within normal physiological limits, without producing specific deficiencies. Diet was shown to have an influence on the growth of animals and on the cholesterol content andß‐glucuronidase activity in the blood serum. However, diet did not influence the rate of metabolism of DMH or the concentration of metabolites. (Nutr Cancer 6, 181–186, 1984)
