Abstractα‐N‐methyl DL‐asparagine was rapidly hydrolyzed bySal. carmelandSal. hadarpreparations. Higher alkyl derivatives were not hydrolyzed and inhibited L‐asparagine hydrolysis.N (β DL‐aspartyl) methyl amine was not attacked by the enzymatic preparations and inhibited competitively the hydrolysis of L‐asparagine. Similarly, higher β‐N‐alkyl derivatives of asparagine were not hydrolyzed and inhibited L‐asparagine hydrolysis, although to a less extent. AbstractOleuropein‐the bitter tasting substance of green olives was isolated and identified by the authors.
