The nutritional value of dried skim milk in broiler diets |

AbstractTwo experiments are reported in which dried skim milk was used at levels of 0, 40, 80, 120 and 160 g kg−1of diet to replace mainly fishmeal in broiler diets. In experiments 1 and 2, the stocking densities were 0.2 and 0.08 m2per bird, respectively. Food intake was increased by dried skim milk, particularly at the higher levels of inclusion. Live‐weight gain was not affected by the inclusion of skim milk, but the efficiency of food conversion was adversely affected after week 1 in experiment 1 and by week 4 in experiment 2. Litter moisture content was virtually unaffected by treatment in experiment 1 but was significantly increased by dietary treatment in experiment 2. AbstractDifferences were observed in the texture and susceptibility to enzymic breakdown of sulphited fruit of eight strawberry varieties. Cambridge Favourite was the softest variety in sulphite and was also the most susceptible to breakdown by pectolytic enzymes ofRhizopusandMucorspp. Endopolygalacturonases (endo‐PG) from these species were more rapidly inactivated in sulphite liquor in the presence of fruit of the variety Harvester, which consequently showed the greatest resistance to breakdown. Isoelectric focusing indicated that a single major isoenzyme from each strain ofR. sexualis, R. stoloniferandM. piriformispersisted in sulphite liquor and was, therefore, responsible for breakdown, although the major form ofM. piriformiswas less acid‐stable than those of theRhizopusspp. Other minor isoenzymes produced by the fungi were inactivated within 24 h of sulphiting. AbstractCurrent views on freeze damage require that a reversal of osmotic flow occurs, on differential freezing across a membrane. This hypothesis has been tested using a variation of the traditional thistle‐funnel apparatus. Cellulose acetate membranes were used to retain sucrose solution within the thistle‐funnel and the arrangement was immersed in water. The sucrose concentration was measured refractrometrically whilst the water was slowly frozen. Once the water had fully frozen the sucrose concentration was observed to increase, reversing the steady dilution that had been observed before freezing of the water was complete. This concentration effect is consistent with a reversal of osmotic flow on differential freezing across the membrane.
