AbstractAqueous extracts of soya beans are shown to inhibit the proteolytic enzymes of malt on a gelatin substrate and those of wheat flour, and papain, on a gluten substrate. The effect of the inhibitor is compared with that of potassium bromate.

AbstractTest‐plots of strawberries, sugar beet, hops and brussels sprouts were sprayed with the mixed insecticide, made radioactive by synthesizing it from32P, at various times from May to October. The insecticide sprayed contained roughly equal proportions of octamethylpyrophosphoramide, (Me2N)4P2O3, and its higher homologue, (Me2N)5P3O5.On analysing the sprayed crops at various times after spraying it was found that the concentration of both constituents in the plant fell at much the same rate, and that this rate varied little amongst the plant species treated providing all were treated at the same time of year. The rate slowed somewhat, however, as the year progressed from May to September, and became very slow indeed in October.It was also shown that the plants decomposed the insecticide. It is likely that practically the whole lowering of concentration with time is attributable to this decompositio

AbstractSugar beet and strawberry plants were treated with octamethylpyrophosphoramide, R4P2O3, and tri(dimethylamino)phosphine oxide, R3PO [R = Me2N‐], containing32P. Both are decomposed at similar rates in both sugar beet and strawberries. When sugar beet treated with R4P2O3were analysed 10–14 days after treatment, it was shown that the32P in the beet existed only as unchanged R4P2O3and products not extractable from water by chloroform. When R3PO‐treated‐beet were analysed it was found that, besides unchanged R3PO and non‐chloroform‐extractable compounds, some of a compound less extractable than R3PO by chloroform was produced. AbstractWhale‐meat and ‐liver meals, long used in animal feeding‐stuffs as protein‐source, also contain B vitamins.Samples representing 1950–51 season's production of two British whaling companies operating from Great Britain have been examined for six members of the vitamin‐B complex by microbiological methods. AbstractIt is shown that the residual benzene hexachloride (BHC), determined analytically in a loam soil, is a function of the amount of benzene hexachloride (13%y‐isomer) (referred to in this paper as BHC‐13) applied per acre and the time elapsing after application. A significant correlation was found between the level of residual BHC and degree of tainting of potatoes grown in the same soil. The taint measurements involved in the present work are in agreement with the much more numerous and independent measurements that formed the basis of an earlier paper.BHC‐13 thoroughly worked into the top six inches of a loam soil, at rates up to 8 lb. per acre, was lost at an exponential rate of approximately 50% per annum over the period of the trial. Provided that the application of BHC‐13 to the soil does not exceed 1/4 1b. /acre annually, the risk of growing tainted potatoes on loam soil in this country seems slight; surface application at rather higher rates may also

AbstractSunflower seed has been cultivated in Khartoum during both the summer and winter, and the analytical results for the respective oils are given. It is observed that increased temperature during the period of ripening of the seed leads to a very much reduced linoleic acid content in the oil. The importance of marketing crops grown in the same area during different seasons separately is stressed.

AbstractCiders are prone to a malo‐lactic fermentation which can be beneficial in reducing the acidity of sharp juices, but which may cause spoilage in sub‐acid juices. A method is described for the estimation of malic acid in cider which is useful for following both the decrease in malic acid content during fermentation and also for observing changes in the malo‐lactic index. The latter is the ratio of calculated free acidity to observed free acidity at any stage in the fermentation and it should remain constant throughout the full course of fermentation and maturation of a normal sound cider. It decreases in value when acid spoilage occurs through the development of undesirable organisms and enables the malefic influence of these organisms to be detected before any increase in acidity becomes apparent.
