The importance of providing energy supplies in the most efficient way possible is stressed. Reductions in specific energy consumption for the concentration step can be achieved by using multiple‐effect evaporation and thermal and mechanical vapor recompression or by the use of reverse osmosis followed by evaporation. Significant reductions in specific energy consumption for the drying process can be achieved by recovering the heat from the hot exhaust gases using suitable heat exchangers, by using a fluidized bed for the final water removal step, and by altering the process conditions. The project consisted of an initial survey to assess the potential for conservation. the forming of an energy management team, and adoption of a policy. A survey of 8,749 people was conducted in Great Britain to determine the percentage of those who limited or avoided consumption of cow's milk for reasons other than financial. Those who limited or avoided cow's milk consumption were further questioned to determine whether their reasons were perceived by them to relate to allergy/lactose intolerance. Of the sample population 1.47% limited or avoided cow's milk consumption for reasons that might possibly be related to allergy/lactose intolerance.
