In an interlaboratory trial, the Direct Epifluorescent Filter Technique (DEFT) for estimating the hygienic quality of raw milk was compared with the colony count method. The results, from replicate samples of 60 chemically preserved milks examined at eight dairy laboratories, showed linear correlation coefficients ranging from + 0.19 to + 0.90. DEFT results depended on the skill of the operator and agreed less well with colony counts made before preservation than with colony counts made at the same time as DEFT counts. The combined DEFT counts from all laboratories compared with colony counts made after preservation showed a linear correlation coefficient of + 0.87; the equation for the regression line was y = 1.00x + 0.04, indicating that the DEFT can provide results comparable to those of the colony count.

Widespread discussion of the effects of fat in the diet and the publication of the report of the Committee on Medical Aspects of Food Policy (COMA, 1984) have created an interest in the possibilities of manipulating the fat content of milk from the dairy cow. The two most practical methods seem to be through nutrition and breeding. However, the former would be expensive and the latter would take many years. Genetic engineering techniques may produce more rapid results but would create problems of both an ethical and an economical nature.

A study was undertaken to define the seasonal changes in the efficiency of recovery of milk fat and protein in curd during Cheddar cheese manufacture, and to examine the milk compositional factors that may contribute to these effects. Distinct seasonal trends in the efficiency of conversion of milk fat and protein to cheese were noted. Variations in the retention of milk fat in curd could be associated with seasonal changes in the casein to fat ratio of the milk.

Many companies in the food industry are at risk from attacks by extremist groups and are now using sophisticated security equipment to protect their installations. In this paper I outline some of the principal types of electronic equipment available to improve security on large sites. Every installation has different requirements due to such factors as the size and nature of the site to be protected, the level of security risk, the number of people involved and the type of security problems. The technology described in this paper is widely used in British industry and is currently available.
