A total of 432 boneless beef loin steaks were prepared using three different cookery methods (conventional electric oven, electric convection oven and microwave oven) and evaluated for palatability by an experienced six‐member laboratory taste panel. Cooking losses and times were also recorded. Composite results indicate that microwave cookery can not be utilized to shorten cooking times without compromising the eating quality, but that preparation time can be substantially reduced (66%) without compromising eating quality by using convection rather than conventional cookery methods, under the conditions in which this study was conducte

A path model was tested to ascertain the relationships between certain socio‐economic and demographic variables, the percentage of household meals prepared and eaten at home (secondary household production), food expenditures, and the household's reported adequacy of food consumed. Significant positive predictors of secondary household production of food were the age of the head and household size. Negative predictors were education of the head, income of the head(s) and number of hours worked by the household head(s). By far the most important predictor was the number of hours worked. The strongest predictor of food expenditures was household size. Other positive predictors were income of the head(s), number of household heads and the degree of urbanization. Negatively affecting food expenditures was secondary household production of food, indicating the ‘saving’ effect of preparing meals at home. The household's reported adequacy of their food was predicted by the positive effect of education of the head, age of the head, tenure, hours worked by the head(s) and number of household heads.Although the number of hours the heads are employed decreased the percentage of meals prepared at home, and the percentage of meals at home negatively affected expenditures, the number of employment hours had no effect on food expendi

The purpose of this study was to determine the physical energy utilized in machine‐drying and the human energy utilized in line‐drying with a standard test laundry load in order to demonstrate the benefits of making a trade‐off between mechanized energy and human energy utilized in drying laundry. Comparatively, only a small amount of metabolic energy was utilized in line‐drying. 摘要:
An effective method for providing information to bring about meaningful change and encourage the adoption of innovation is by the use of demonstration projects. This paper examines a specific housing demonstration project based on three design criteria: dynamics, life cycle cost analysis, and nexus. The paper also includes some discussion about housing and society in the future, particularly in terms of environmental stress and social change, and how housing can be responsive to changing human needs.

Multivariate statistical techniques were used to explore two major conceptual issues in consumer behaviour research involving social class: (1) the importance of income, as compared to social class, in determining household behaviour, and (2) the effect of the status of wives on the behaviour of their households. A subsample of expenditure data, collected from 5,994 husband‐wife families, as part of the 1973 Consumer Expenditure Survey, was used in the analysis. The dependent variable was expenditures for household services. The independent variables included total consumption expenditures (a proxy for income), the status of the wife, the status of the husband, family type, location, and characteristics of the dwelling. The results of an Ordinary Least Squares regression procedure demonstrated that total consumption expenditures were the most important variable in determining expenditures for household services. 摘要:
The purpose of this study was to identify quality control problems and causes of these problems associated with overseas apparel manufacturing. Apparel exporters and fabricators in seven Asian countries were visited. Through content analysis, four major problem categories were identified, which included construction, finishing, materials and fit. These problems appeared to be due to seven causes: (i) not following specifications, (ii) production method, (iii) management, (iv) facilities and equipment, (v) skills of workers, (vi) governmental structure and resource availability, and (vii) culture.
