Carrot slices cooked for 11 hours on the LOW setting of an electric casserole were firmer and less acceptable than those which had been boiled for 25 minutes; when slices were cooked on the HIGH setting of the casserole for 6 hours they became as soft as boiled slices. Short periods of heat treatment in the casserole on LOW, followed by boiling for 25 minutes, produced slices which were firmer and less acceptable than those which had simply been boiled.These observations may be explained in terms of the action of the enzyme pectin methylesterase (PME) which at certain temperatures can cause firming of plant tissue. During the early stages of casserole treatment on LOW, considerable PME activity could be detected in carrot slices whereas on the HIGH setting, thermal inactivation was more rapid. When using the casserole on LOW, undesirable firmness in carrot tissue could be prevented by subjecting slices 1 cm thick to a preliminary 2 minute blanch in boiling water.

The conceptual frameworks of family management attempt to explain family behaviour with respect to management activities. However, rigorous empirical tests concerning the validity of these frameworks have not yet been conducted due to a number of unresolved research issues such as the measurement of concepts, data collection and research modelling specifications. This paper attempts to perform a preliminary empirical test of a research model based on the conceptual frameworks in family management. Satisfactions with eleven types of family outputs were examined in relation to a family's input conditions and throughput activities. Throughput activities as a group were found to contribute significantly to the family's satisfaction with the cleanliness of the house. Planning activities, decisionmaking styles and time spent in household production were important in explaining satisfaction with many of the outputs studied. The results of this preliminary test of the management research model demonstrate the need to collect better and relevant data and to develop improved measures of the management concepts so that a full and rigorous test of the family management frameworks can be properly performed. Other research issues such as simultaneity and functional form could then be addressed.

The quest for flame retardance has witnessed a continual involvement of many diverse disciplines; especially concerned are those in the area of textiles and clothing. In this study, an instrument was developed to assess the subject's awareness of flame retardant textile products, cost and care practices of flame retardant fabrics, and attitude toward federal flammability legislation. The main objective of the study was to conduct a survey among 1500 consumers in a south‐western city of the United States to determine if measures taken by the Consumer Product Safety Commission in regard to flame retardant items had been understood by the consumer. The study determined a need for extensive consumer education in the area of textile flammability to heighten awareness of flame retardant textile items and care practices. We live in an unequal society, half of whose members, women, are thought of as naturally subordinate to and dependent on the other half, men. In spite of considerable advances in the 20th Century, sexist ideology still pervades our everyday lives and women are traditionally subordinate to men in their domestic, work and more general societal roles. What or which are the causal variables in this equation? Is it patriarchy itself which causes the subordination of women in the paid labour market? Is it rather the capitalist mode of production and women's exploited position within this system that is the cause of their economic dependence, and in turn their more general subordination to men? The author considers the subordination of women both historically and in contemporary society.

A world questionnaire survey has been undertaken to obtain some information on the present position of home economics in co‐educational curriculum development. Responses were received from nineteen countries from all over the world.Home economics education occurs within formal education in every country, and in most countries the extent of home economics education for boys has been increasing, compared with the UNESCO survey carried out 10 years ago. The washing performance of a popular U.K. detergent product has been evaluated at two different temperatures. The results are discussed in terms of potential energy savings which can be achieved by washing at cooler temperatures and the acceptability of the clean laundry as determined by a panel of consumers.
