A worldwide enquiry was undertaken in 1986–1987 to obtain up‐to‐date information about mycotoxin legislation in as many countries of the world as possible. Together with some additional data collected in 1981, information is now available about planned, proposed, existing or absence of legislation in 66 countries. Details about tolerances, legal bases, responsible authorities, prescribed methods of sampling and analysis and disposition of commodities containing inadmissible amounts of mycotoxins, are given. The information concerns aflatoxins in foodstuffs, aflatoxin M1in dairy products, aflatoxins in animal feedstuffs, and other mycotoxins in food‐ and feedstuffs. In comparison with the situation in 1981, limits and regulations for mycotoxins have been expanded in 1987 with more countries having legislation (proposed or passed) on the subject, more products, and more mycotoxins covered by this legislation. The differences between tolerances in the various countries are sometimes quite large, which makes harmonization of mycotoxin regulations highly desirable.

Gum karaya (GK), accepted as Generally Recognised as Safe (GRAS) in the USA since 1961, was accepted temporarily (Annex II) as a food additive by the EEC in 1974. Since then no adverse incident involving human health has been attributed to the ingestion of GK, which is used in extremely small amounts in foods. This report collates the evidence of safety now available and presents the data on Need, production tonnages and dietary intake levels.

The antioxidants TBHQ, α‐tocopherol, Prolong P (rosemary, thyme, marjoram mixture) or ascorbyl palmitate were not found able to replace the antioxidant BHA in potato flakes production if stored for up to 24 months. Ascorbyl palmitate gave good antioxidative protection up to 16 months of storage, and also protected against carotenoid degradation better than the other antioxidants. The ascorbyl palmitate lost its antioxidative effect after longer storage.

Methodologies used to assessN‐nitroso compounds as a group by chemical denitrosation with hydrogen bromide in glacial acetic acid have been described. Carrying out these analyses without precautions can cause considerable variations in results. Some pitfalls must be avoided in order to obtain valuable results and accurate interpretations.

Chromium and nickel concentration in roadside unwashed wine grapes and leaves is considered as a function of the distance from the suspected source, an isolated straight road. The analyses were performed with electrothermal atomization in a graphite furnace. The decrease in the concentration of the element can be described by means of a three‐parameter exponential functionc=A+ (B ‐ A)exp(‐ Cd)which allows the determination of the asymptotic level far from the emitting source (c8) and the pollution level (c0) at the edge of the road(d =0). Least‐squares nonlinear regression gives the estimation of the parametersA, Band C. The results indicate that an effect is detectable up to a distance of about 50 m.

Between 1978 and 1986, 305 samples of apples were monitored for the residues of a wide range of pesticides used in their production. Three (1%) contained residues above the maximum residue limits (MRL) permitted under the Canadian Food and Drug Act and regulations; two involved phosalone at 5.9 and 6.2 mg/kg respectively and one involved diphenylamine at 6.7 mg/kg when the MRL was 5.0 mg/kg for both compounds. Low residues of dicofol, endosulfan, phosalone, phosmet, captan, daminozide and diphenylamine were frequently found; however they were well below the MRLs. These residue levels were correlated with survey data on the areas of the apple crop treated with specific pesticides. Residues of carbaryl, diazinon, ethion, azinphosmethyl, parathion, and dithiocarbamate fungicides were found occasionally; all were well below the MRLs and correlated with the pattern of use. No residues of PCB were found to a limit of detection of 0.01 mg/kg.

摘要:
Quantitative data on volatile compounds have been reported in 16 food items. No publications reporting quantitative data were found for two of these 16 food products, i.e. avocado and jackfruit. About 550 volatile compounds have been assayed globally in the other 14 food products. Mango and raspberry were the products with the greatest number of volatile compounds; the most representative substances were benzaldehyde, ethyl acetate, limonene, and 2‐phenylethanol.
