AbstractEffects of different concentrations of glycerol on the activity of amylase, lipase, and proteases in frozen minced pancreas were studied. A 15% glycerol addition was found to decrease the proteolytic enzyme activity and to increase the activity of amylase. Moreover, accelerated freezing was shown to enhance the activity of all the enzymes studied.

AbstractDirect sampling gas‐liquid chromatography‐mass spectrometry was used to quantitate hexanal levels in nitrite and non‐nitrite cured loin bacon stored for two weeks at 4°C. The objective was to evaluate the effect of varying levels of sodium nitrite on the flavour of cured bacon. Non‐nitrite cured bacon yielded greater amounts of hexanal than bacon cured with 40, 120 and 1000 ppm sodium nitrite. Initially the differences were not significant but became evident during storage. AbstractSeit der Entdeckung des Vitamincharakters der Tocopherole im Jahre 1922 durch Evans u. a. [3] ist eine Vielzahl von Methoden zu ihrer qualitativen und quantitativen Bestimmung beschrieben worden. Vor allem in den letzten Jahren erlebten dabei die physikalischen und chromatographischen Methoden infolge der Verbesserung der Analysentechnik einen beträchtlichen Aufschwung.Unter den vielfältigen chemischen Bestimmungsmethoden, die auf der leichten Oxydierbarkeit des Tocopherols beruhen und sich lediglich in der Wahl der Oxydationsmittel und der quantitativen Erfassung der dabei entstehenden Reaktionsprodukte unterscheiden, kristallisierte sich das klassische Emmerie/Engel‐Verfahren (Reaktion mit Eisen(III)‐chlorid und Erfassung der entstehenden Eisen(II)‐ionen als Dipyridylkomplex) als ein häufig verwendetes und zuverlässiges Verfahren heraus. Durch Modifizierung, z. B. Kopplung mit der Dünnschichtchromatographie [4,6] und veränderte Aufarbeitungsschritte (z. B. [8]), wurde diese Methode auf die verschiedensten tocopherolhaltigen Substrate anwendbar. In der Routineanalytik setzen sich jedoch vor allem die GLC und HPLC zur qualitativen und quantitativen Tocopherolbestimmung durch. Ihre Vorteile liegen im geringen Aufwand für die Probenvorbereitung und der kurzen Analysenzeit bei hoher Trennleistung. Die Tocopherolbestimmung nach Jáky mit vorgeschalteter Dünnschichtchromatographie [6] ist für Konzentrationsbereiche von 400–800 ppm Tocopherole in pflanzlichen Ölen, wie Erfahrungen von Franzke u. a. [4]zeigen, sehr gut geeignet (Wiederfindung 88,1 ± 6,8%). Soll der Tocopherolgehalt aber in tocopherolangereicherten Proben bestimmt werden, versagt diese Methode. Aus diesem Grunde wurde nach einem einfachen Verfahren gesucht, das die Bestimmung höherer Tocopherolkonzentrationen mit guter Empfindlichkeit ermöglicht. Für diesen Zweck scheint die UV‐Photometrie geeignet zu sein, da die Tocopherole im Bereich zwischen 292 und 298 nm absorbieren. So bestimmt Indyk [5] die Vitamine A, E und β‐Caroten in Milchpulver durch UV‐Spektrophotometrie. AbstractThere is great interest in the isolation and concentration of ω‐3‐polyunsaturated fatty acids because of their role in coronary heart diseases [1–3]. For that reason suitable methods for determination of such fatty acids are necessary.The analytical determination of ω‐3‐docosahexaenoic and ω‐3‐eicosapentaenoic acid in complex mixtures of unsaturated fatty acids like marine lipids by packed column gaschromatography [4] will not be succesfull, if you want to avoid preseparations [5, 6]. Good results can be achieved by means of capillary gaschromatography [7, 8] and high performance liquid chromatography [9]. In the cases of enrichment it is sufficient to know only the total content of ω‐3‐fatty acids.By means of reductive ozonolytical cleavage used for exploring fatty acids structures [10, 11] every fatty acid family gives characteristic cleavage products at their alkyl ends:ω‐3 = propanal; ω‐6 = hexanal; ω‐9 = nonanal [12, 13]. AbstractAflatoxins and ochratoxin A are mycotoxins which under certain conditions are produced by fungi species of the generaAspergillusandPenicilliumrespectively. Because of the cancerogenic, teratogenic and nephrotoxic nature of these mycotoxins, they belong to the most dangerous contaminants in food‐ and feedstuffs. A number of cases of human and animal mycotoxicoses have been reported [1]. Deposits of the aflatoxins and of ochratoxin A in animal tissue can occur due to their binding to certain protein fractions and they could be identified in liver, kidney, blood and muscle tissues.Several methods among them thin layer chromatography (TLC), high performance liquid chromatography (HPLC), gas chromatography (GC) and immunological procedures (RIA, ELISA) for identification and determination of aflatoxins and ochratoxin A have been reported [2, 3]. We have been able to develop a new method for the determination of aflatoxins and ochratoxin A in animal tissue, based on described thin layer chromatographic methods [4–8]. The main innovation is a combination of simultaneous extraction and cleaning with a separate thin layer chromatographic separation and determination of the respective mycotoxins.Experiments are carried out on a model system with pig liver, aflatoxin B1and G1and/or ochratoxin A. This new method has a sensitivity of 1 μg/kg for aflatoxins and 10 μg/kg for ochratoxin A with recoveries of 80%
