AbstractThe acute oral toxicity (LD50) of chlorfenvinphos (Chl) showed no significant difference between Wistar rats (males and females) aged 42 days kept for 30 days on 4.5% or 26%‐protein diet, but a twofold difference appeared after 60 days on these diets (LD50was lower in low‐protein rats) showing that a longer period of protein deficiency more increases the susceptibility of rats to the lethal action of Chl.During acute poisoning produced by intragastric administration of single convulsive dose of Chl (30 mg/kg body weight) to rats kept for 30 days on low‐protein or optimal‐protein diet, changes were observed in the activity of some enzymes in the serum and brain.Protein deficient diet increased the Chl‐produced inhibition of acetylcholinesterase (AChE) activity in the brain; the augmented activity of aspartate aminotransferase (AspAT) and alanine aminotransferase (AlaAT) and glucosephosphate isomerase (PHI) appeared only in the serum of low‐protein rats ‐ these changes were more marked in females. Other enzymatic alterations caused by Chl were similar independently of the diets and also more evident in females; for comparison the rats received also standard Murigran diet. Activity of the brain aromatic amino acids aminotransferases (AAA) showed a decreasing trend in Chl‐poisoned rats, while in the liver the activity of these enzymes rose, but chiefly in the rats receiving previously the diet with 26% of protein or standard diet.In the rats surviving the acute Chl poisoning, with the evidently seen convulsions, the activity of nearly all enzymes was norma

AbstractDie Untersuchungen zeigen, daß die aus dem Pro‐Kopf‐Verbrauch an Lebensmitteln errechnete Spurenelementaufnahme und die analytisch ermittelten Werte der Ganztagsdiät sehr gut übereinstimmen. Von den allgemein empfohlenen Werten weichen vor allem die Kupfer‐, in geringerem Maße die Zink‐ und Eisenzufuhr ab. Aus den Ergebnissen für einzelne Altersgruppen geht hervor, daß die Kupferzufuhr nur bei Kindern bis zu 6 Jahren als ausreichend betrachtet werden kann. Die Eisenversorgung bei Mädchen im Gymnasialalter und bei älteren Menschen sollte verbessert werden.Da die Spurenelementverwertung bekanntlich von zahlreichen diätetischen und individuellen Faktoren beeinflußt wird, sind weitere Untersuchungen notwendig, um zu entscheiden, ob die analytisch ermittelte Spurenelementzufuhr eine entsprechende Versorgung sicherstellt oder ob man mit den auch bei leichter Unterversorgung oft auftretenden gesundheitlichen Beeinträchti

AbstractPure cultures ofS. lactis, S. cremoris, S. diacetilactisandS. thermophiluswere cultivated on soymilk medium containing 3% lactose and skim milk medium which were infected or not infected with bacteriophage. The cultures were incubated for 24 h at the optimum temperature of each organism. The growth, lactic acid production and activity of each culture were periodically examined. The growth and the acidity development of the cultivated cultures on soymilk medium infected with bacteriophage increased gradually during the incubation period, whereas the cultures grown on skim milk infected with bacteriophage showed less growth and acid production. Moreover, the growth and the rate of lactic acid production of the cultures cultivated on soymilk medium were higher than those of the cultures grown on skim milk medium (control). Therefore, soymilk medium containing 3% lactose could be recommended as a protective medium against bacteriophage infection for lactic acid starter.

AbstractGlucosylamine werden häufig als Zwischenstufen im Verlauf der „frühen Phase”︁ der MAILLARD‐Reaktion zwischen reduzierenden Kohlenhydraten und Aminosäuren diskutiert. Beim Versuch der gezielten Synthese solcher Glucosylamine aus acyliertem Glucosylamin und Halogencarbonsäureester konnte festgestellt werden, daß die Stufe des entsprechenden Glucosylamins durchlaufen wird, sich aber intermolekular das Bisglucosylamin bildet. Mit Hilfe der massenspektrometrischen Analyse konnte dessen Struktur zweifelsfrei belegt werden.Untersuchungen zur Reaktivität des Acetylglucosylamins führten bei Umsetzungen mit aromatischen Aldehyden zu Azomethinen, welche über IR‐ und1H‐NMR‐Spektroskopie eindeutig charakter

AbstractAmyloglucosidase (Novo 150 L, 5 ml/100 kg) used with optimum α‐amylase supplements [MSKB/100 g flour] of wheat malt, 7.5, fungal, 20, and bacterial, 0.4, increased the reducing sugars of sour doughs (pH 4.55, 3 h/30 °C) by 71.7 to 72.2, 94.0 to 103.1 and 71.7 to 77.0% as compared to 48.3 to 58.0, 61.1 to 71.3 and 7.3 to 12.0% of initial pH 5.8 doughs, respectively. Amyloglucosidase alone or with α‐amylase supplements had negligible effect on mixing properties of dough, falling number values and paste viscosities which were affected more by the wheat malt α‐amylase.
