AbstractThe properties of doughs containing various amounts of Pekilo biomass which is a dried powder produced from the filamentous microfungusPaecilomyces variotiand containing about 50% protein, were tested using Brabender farinograph and extensograph. The flavor properties of Pekilo in white wheat bread, and soft and hard rye bread were determined by a descriptive organoleptic method. Pekilo increased the water binding of the dough from about 62% to approximately 72% when the flour substitution level was raised from 0 to 8%. Pekilo had a negative effect on the stability and extensograph properties of the dough and this effect was augmented when the amount substituted was increased. The mild taste of Pekilo powder was distinctly observed in bread already at the lowest substitution levels. AbstractUntersucht wurde die Anwendungsmöglichkeit der FOLIN‐DENIS‐Methode zur Bestimmung des thermischen Abbaues von Anthocyanen. Als Vergleich diente die FULEKI‐FRANCIS‐Methode. Als Modelle dienten die Anthocyane Pelargonidin‐3‐sophorosid, Cyanidin‐3‐sophrosid und Delphinidin‐3‐rutinosid. Die Erhitzung erfolgte in 0,05 M Citratpuffer pH 3,5 bei 100°C. AbstractDie Aktivität einer Hauptform der Tomaten‐Polygalakturonase (EC 3.2.1.15) ist sowohl von der Herkunft der Galakturonansubstrate (Apfel, Citrus) als auch von der Molmasse, vom Veresterungsgrad und von der Verteilung der Estermethoxylgruppen abhängig. Als optimale Substrate erweisen sich Citruspektinsäuren mit einem Veresterungsgrad kleiner als 1% und einer Molmasse entsprechend einer Viskositätszahl [n] 90 ml/g Galakturonan. Die Km‐Werte fallen im Meßbereich [n] = 16 bis 474 ml/g bis auf einen konstanten Betrag von 15,6 mMol Galakturonsäure‐Einheiten, entsprechend 0,27% Galakturonan, ab. Im Bereich der Veresterungsgrade des Galakturonans von 80 bis 90% erreicht bei statistischer Verteilung der Estermethoxylgruppen die Aktivität den Wert Null. Enzymatisch entesterte Pektine mit Veresterungsgraden kleiner als 32% und einer blockartigen Verteilung der Estermethoxylgruppen verhalten sich wie vergleichbare Pektinsäuren.Insgesamt wird eine weitgehende Übereinstimmung der Enzym‐Substrat‐Wechselwirkungen mit Endo‐Polygalakturonasen aus Aspergillus spec, festgestellt. AbstractDas Naßspinnverfahren ist für die Herstellung von Proteinfäden geeignet. Untersuchungen an der Modellsubstanz Casein zeigen, daß kausale Beziehungen zwischen den Rohstoffeigenschaften, der Homogenität (Löslichkeit) und der Spinnbarkeit bestehen.Aus dem titrimetrischen und rheologischen Verhalten der Spinnlösungen wird ein günstiges Protein‐Alkali‐Verhältnis abgeleitet, das sowohl ernährungsphysiologischen als auch spinntechnischen Anforderungen genügt. Die Prüffiltration und die Partikelzählung eignen sich zur Beurteilung der Qualität der Spinnlösung. AbstractRoasted spices are extensively used as flavour enhancers in various curries, sausages and soups. Pyrazines, which are potential flavour enhancers make a substantial contribution. AbstractDie Verwendbarkeit der reichlich vorkommenden Reizker ist wegen ihres bitteren Geschmacks begrenzt. Es wurde deshalb der Geschmack der 4 Reizkerarten Lactarius rufus, Lactarius torminosus, Lactarius trivalis und Lactarius necator in frischem Zustand und nach verschiedenen Verarbeitungsarten nach der beschreibenden sensorischen Methode analysiert.In frischen Pilzen waren die Geschmacksarten brennend‐scharf, stark‐bitter, süßlich/salzig, pilzartig und widerlich vorhanden. Alle Wärmebehandlungen zerstörten den brennend scharfen Geschmack, gleichzeitig war aber eine Zunahme des stark‐bitteren Geschmacks festzustellen. Braten und Erwärmung mit Mikrowellen hatten einen widerlichen Geschmack zur Folge, der auch im Blanchierwasser wahrgenommen wurde. Bei der Gefrierlagerung nahm der brennende Geschmack schon innerhalb eines Monats ab. Beim Blanchieren wurde der stark‐bittere Geschmack in den Pilzen schwächer, war jedoch gleichzeitig im Blanchierwasser festzustellen. Im Blanchierwasser kam auch eine salzig/süßliche Komponente vor, die in den frischen Pilzen selbst nicht gefunden wurde. AbstractFeeding of a glycine rich diet with sufficient supply of essential amino acids (mixture of casein and gelatine) causes a significant reduction of the serum triglyceride level in rats. To study some aspects of this triglyceride lowering effect the in vivo incorporation of C14‐l‐acetate and C14‐l‐palmitate into the serum and liver lipids as well as the lipoprotein lipase and the hormone sensitive lipolytic activity of the epididymal adipose tissue in vitro were estimated. After feeding the gelatine containing diet the incorporation of labelled acetate and palmitate into the serum triglycerides was significantly decreased with no change of the incorporation into the liver triglycerides and without detectable accumulation of liver lipids. The decreased serum triglyceride level of the serum corresponded to a decreased lipoprotein lipase activity in the epididymal adipose tissue, whereas the basal and norepinephrine stimulated lipolysis of this tissue was not affected. From these results it is concluded that due to the feeding of a glycine rich diet the triglyceride secretion of the liver is decreased leading to a lower serum triglycerid
