AbstractThe application of second order designs is dealt with in the case of the optimization of waffle production. A second order design with 3 explanatory variables (protease supply, reaction time, water addition) is worked out. The results are evaluated under four aspects:– the computation of statistical data– the crest‐line analysis according to Hoerl (optimization)– the graphical presentation of results and– the computation of further combinations.Control experiments using the second order designs give 3% deviation, compared to 17% using the first order design. AbstractDer Proteingehalt von entfetteter Milch ist nach Verdünnung mit Alkylpolyglycoläthersulfatlösung mit Hilfe von Absorbanzmessungen bei 235 und 280 nm bestimmt worden. Die Differenz der Absorbanzwerte A235‐ A280weist eine hohe Korrelation zu den Ergebnissen der Kjeldahl‐Stickstoffanalyse auf (r= 0,99). Der Proteingehalt von Caseinat‐ und Milchserumlösungen konnte analog ermittelt werden. Die Methode besitzt den Vorzug, von der Aminosäurenzusammensetzung des Proteins, dem Nucleinsäure‐, Salz‐, Lactose‐ und Nichtproteinstickstoffgehalt der Milch weitgehend unabhängig zu sein. Beide Absorbanzwerte sind aus Lösungen der gleichen Konzentration bestimmt worden. AbstractZur Abschätzung der Effektivität des kovalenten Methionineinbaus in peptisches Partialhydrolysat während der Plasteinreaktion unter Zusatz von L‐, DL‐ bzw. D‐Methioninethylester wurden die Gehalte an freiem Methioninethylester und Methionin sowie die gebundenen Methioninmengen bestimmt. Die Plasteinreaktion wurde mit Thermitase als Reenzym durchgeführt. AbstractThe effects of γ‐irradiation on the browning reaction in the model system of fructose‐phenylalanine solution were investigated. The optical absorption recorded for irradiated and heated solutions of fructose‐phenylalanine was different from those of only irradiated or only heated solutions.To explain the role of carbonyl compounds formed during radiolysis of fructose and phenylalanine investigations of their N‐methyl‐benzothiazolone hydrazone hydrochloride derivatives were undertaken. AbstractComparisons were made of the amino‐acid composition and protein content of two strains ofAgaricus bisporus‐ Somycel 9 and Somycel 53. The mushrooms were cultivated in broiler chicken manure and horse manure. Protein and amino‐acid contents were analyzed in the total sporophore, cups and stipes at three developmental stages according to the diameter of the cup: I40 mm. The protein content in strain Somycel 53 increased significantly during the growth cycle. The protein content in the cups was higher than in the stipes. The type of compost influenced the amino acid composition of the mushroom according to the strain. There was a tendency for the lysine content to increase in the sporophores during the successive stages of
