AbstractAttempts were made to prepare 5 protein rich food mixtures to be used as supplementary and weaning foods for children from 6 months of age onwards. They contain vegetable and animal protein sources. They were prepared in a way to simplify their use. Potatoes, carrots and peas were the basal ingredients in each mixture. The protein content of the mixtures ranges from 16‐20 % with a chemical score not less than 50 %. The mixtures contained most of the essential amino acids in optimal concentrations, except methionine and cystine which are slightly lower than the amounts recommended by FAO. The nutritive value of each mixture estimated by the slope ratio bioassay procedure was high. They are nutritionally superior to casein, used as a reference protein. AbstractA simple test to assay mycotoxin potential of cereal grain and products was elaborated. In cereal grain samples during 1977 and 1981 formation of ochratoxin A, citrinin and zearalenone was observed respectively in 40%, 7 % and 31 % of cereals samples. Aflatoxin and sterigmatocystin were not formed in any sample of cereal grain. Citrinin and penicillic acid were found as mycotoxins accompanying ochratoxin A.

AbstractFour classes of microbiological quality of cereal grain are proposed. For classification the frequency of kernels contamination withPenicillia, AspergilliandPhycomycetesis considered as essential. Lots contaminated with mycotoxins (ochratoxins) were usually of IIIrd and IVth class of quality.

AbstractAus Ackerbohnenproteinisolat wurden peptische Partialhydrolysate mit unterschiedlichen Hydrolysegraden hergestellt und zur Plasteinreaktion mit Thermitase eingesetzt. Während sich aus Partialhydrolysaten mit Hydrolysegraden oberhalb von etwa 60% unlösliche Produkte bildeten, konnte aus weniger stark aufgespaltenem Ausgangsmaterial Plasteingel erhalten werden. Gelchromatographisch sowie durch Bestimmung der in 10%iger Trichloressigsäure unlöslichen Anteile ließ sich ein proteolytischer Abbau unter den Bedingungen der Plasteinreaktion nachweisen. Bei Zusatz von DL‐Methioninethylester zum Partialhydrolysat konnte mit ansteigendem Hydrolysegrad ein zunehmender Methionineinbau in das Plastein beobachtet

AbstractDie Lipid‐senkenden Eigenschaften von Ackerbohnenprotein sind bisher lediglich im Tierexperiment beschrieben. AbstractThe foaming ability (foam capacity and stability) of protein isolates from faba beans(Vicia faba L.)depends closely on the manner of isolation and treatment of the isolates.Unmodified isolates possess a moderate foaming ability with a maximum foam capacity of 210 % in alkaline solution (pH 10.0) at concentrations of about 3 %. The foam capacity and stability can be improved by treatment with isopropanol or moderate temperature, as well as by denaturing by alkali or by specially heating at 80 °C. Thereby modified preparations are formed possessing a foam capacity of more than 400 % and a foam stability of 80‐100%. High concentrations of protein favour the formation of stable foams.Succinylation improves the foam formation properties of proteins. Maximum values of foam capacity (≈ 400%) are produced at a high degree of succinylation, that is after blocking more than 80% of protein amino groups, in neutral solution, while the foam stability under these conditions decreases. AbstractAbout 80 % of the world protein production are of vegetable origin. More than half the vegetable protein is fed to animals, whereas merely 10 kg protein per capita are obtained from meat, milk and eggs per year. Therefore, and because of rising prices for raw materials and energy the production and the firsthand utilisation of proteinacous plants for foodstuffs are a worldwide problem.As future source of protein for human nutrition sunflower seed and oil extraction residues from sunflower seed, respectively, are of great significance. Sunflower seed does not contain anti‐nutritive and toxical compounds. After crossing of species having a high oil content, the today cultivated sunflower hybrids bring seeds containing 17‐22% crude protein and 30‐52% oil. The cultivation also has led to a considerable reduction of the hull content.In processing of sunflower proteins colour problems occur resulting from finely ground particles of dark hulls and from polyphenolic acids which are easily Oxidized and converted into brown polymerics. Essential components of the sunflower protein production are, therefore, the at least 98 % dehulling before processing as well as the separation of polyphenolic acids and/or the prevention of their oxidation.In principle, the variation and combination of technological steps in pre‐treating and defatting of sunflower seed, in extracting, precipitating, washing and drying of proteins, the chemical modification of proteins obtained, the interaction with neutral salts or complexing agents, and the admixture of lysine or proteins of high lysine content allow to adapt sunflower proteins to each type of appl

AbstractDie Untersuchungen zur Lokalisierung von proteolytisch aktiven Enzymen in der Zelle vonThermoactinomyces vulgariszeigen, daß diese sowohl gelöst im Zellextrakt (75 %) als auch gebunden an feste Zellbestandteile (25 %) vorliegen. Das Verhältnis der Aktivitäten von löslicher periplasmatischer Fraktion zu löslicher cytoplasmatischer Fraktion zu unlöslicher cytoplasmatischer Membranfraktion beträgt 2:1:1. Die Proteasebildung im Verlauf der Kulturführung wird durch Aktivitätsbestimmung im Zellextrakt erfaßt. Sobald ausreichend (auswägbar) Biomasse im Medium vorhanden ist, kann im Zellextrakt Proteaseaktivität nachgewiesen werden. AbstractDie intrazellulären Proteasen (IP) des Zellextraktes vonThermoactinomyces vulgariswerden hinsichtlich ihrer biochemischen Eigenschaften im Vergleich zu den entsprechenden extrazellulären Proteasen (EP) charakterisiert. Danach sind die Lagerstabilität sowie das Temperatur‐ und pH‐Verhalten (Optimum, Stabilität) beider Proteasen identisch. Jedoch werden Unterschiede zwischen IP und EP nach Einwirkung verschiedener Effektoren und unterschiedlicher Substrate festgestellt.Nach säurenchromatographischer Auftrennung der IP des Zellextraktes handelt es sich um mindestens 3 Proteasen; davon sind 2 Serin‐Proteasen, die außerdem durch p‐Chlormercuribenzoat unspezifisch gehemmt werden.Die gereinigten Proteasen (IP) sind sehr instabil und deshalb bisher noch nicht näher charakte
