AbstractAflatoxin producing strains ofAspergillus flayusLink (IMI 280819) andA. oryzae(Ahlb.) Cohn (IMI 280831) were among the eleven spoilage moulds isolated from five types of poultry feeds. The recorded pH and moisture content values of the various feeds are conducive to mould deterioration. All the four principal aflatoxins (B1, B2, G1, G2) were detected in the analysed feeds though at toxicologically ‘safe’ levels for most farm animals. Significant quantities of aflatoxin B1were produced by the two fungal isolates in all the five classes of poultry feeds withA. flavusyielding the larger amounts. Optimum aflatoxin B1production and mycelial growth in chick mash infusion medium were recorded for both species at 30 and 35 °C, respectively and similarly on the 8th and 6th day respectively when cultures were incubated at 3

AbstractEigelb ist aufgrund seiner Keimbelastung und Enzymaktivität nur begrenzt lagerstabil. Durch Pasteurisieren mit anschließender Kühllagerung kann die mikrobiologische Stabilität von Eigelb wesentlich erhöht werden. Dabei werden die Eigelbproteine mehr oder minder geschädigt.In diesem Artikel werden Ergebnisse zur Kinetik der Proteindenaturierung im Eigelb ohne und mit lagerstabilisierenden Zusätzen an Kochsalz und Saccharose mittels rheologischer Messungen vorgestellt und diskutiert. AbstractFür Perlhühner, Fasane, Tauben, Flugenten und Kaninchen wurden die Schlachtkörperzusammensetzung und ‐qualität ermittelt. Den höchsten Anteil Schlachtertrag brachten die Fasane (78%) und Perlhühner (75%). Bei Kaninchen betrug der Schlachtabfall 38%. Auch im Fleischanteil am Rumpf wurden bei Fasanen (76%) und Perlhühnern (70%) die besten Werte ermittelt. Im Brustfleischanteil lagen die Brieftauben mit 35% vom Gesamtfleisch an der Spitze. Fasane und Perlhühner haben einen höheren Brust‐ und Schenkelanteil als das Wirtschaftsgeflügel. Fasane und Perlhühner enthielten viel Eiweiß (22% bzw. 20%) und wenig Energie bzw. Fett. AbstractThis paper is devoted to the study of the heat treatment regime affection on the rheological properties of the actomyosin (AM) thermotropic gels of the muscle tissue of carp. It is shown, that systems containing AM undergo several conformational transitions during heating. These transitions make the essential contributions into the gelation process since they predetermine the dissociation, reassociation and aggregation of AM, i.e. they determine in the end the nature of the physicomechanical properties of the spatial network. AbstractEs werden Proteinisolate aus Sonnenblumensamen nach unterschiedlichen Verfahrensprinzipien gewonnen, wobei zum einen die traditionelle Technologie der Ölsamenaufbereitung (Vorpressung, Extraktion), zum anderen unkonventionelle Verfahren der Direkt‐ oder Verdrängungsextraktion zur Anwendung kommen. Die Proteine werden anhand ihrer Zusammensetzung und ihrer Eigenschaften qualitativ beurteilt.Proteinisolate aus traditionell durch Vorpressung und Lösungsmittelextraktion resultierenden Extraktionsrückständen entsprechen hinsichtlich Zusammensetzung und Eigenschaften nur mit Abstrichen den Anforderungen an ein in der Lebensmittelindustrie einsetzbares Produkt. Ähnliches trifft für nach der Raffinatvariante einer Verdrängungsextraktion gewonnene Isolate zu. AbstractThe nitrogen solubility index of proteins fromSpirulina platensisas a function of pH in the range of 1 to 12 has been determined both in water and different concentrations of sodium chloride using the spray dried samples. Solubility characteristics show maximum solubility in the pH range of 8 to 10 in water and pH 6.0 ± 0.5 in 0.5 M sodium chloride. The ultraviolet and visible spectra have maxima at 285 and 620 nm, respectively. Fluorescence emission spectrum shows a maximum emission at 340 nm arising from tryptophanyl groups. The sedimentation velocity experiment shows two major fractions with sedimentation coefficient of 2.8 and 4.9 S. The functional properties of the protein are determined using the spray‐dried sample. The result for water absorption (292 g/100 g), fat absorption (56 g/100 g), foaming and emulsion properties were determined and compared with egg protein as standard. AbstractFifty random samples of Kashar cheese were collected from shops in different localities in Erzurum, all contained moulds. Mean count of total surface mould was 3.02 × 1010/g cheese and that of inner mould was 3.02 × 103/g cheese. AbstractVoll ausgebildete, unverletzte äußere Deckschalen bedingen die geringsten Frischmasseverluste von Speisezwiebeln durch Transpiration und Atmungsvorgänge im außenluft‐ und maschinengekühlten Lager. Bereits Deckschalenspalten erhöhen die Frischmasseverluste auf das 1,5‐ bis 1,9fache, Nacktschaligkeit sogar auf des 1,7‐ bis 2,9fache und Lochfraß durchAgrotis segetumSchiff. auf das 2,2‐ bis 2,5fache von unverletzten Zwiebeln. Auch die Zwiebelgröße wirkt differenzierend (kleinste Fraktion +42 bzw. +57%, größte Fraktion −10,5 bzw. −0,8% im Vergleich zur mittleren Fraktion). Fäuleinfektionen führen zu doppelt bis dreifach so hohen Frischmasseverlusten als einsetzendes Sproßaustreiben. Die Atmungsintensität schwankt nach außenluftgekühlter Lagerung unabhängig von Anbaujahr, ‐ort und Sorte zwischen 14,4 bis 19,8 W · t−1.
