SUMMARY:ABacillusstrain, isolated from a ‘blown’ can of bacon, is described: it tolerates 15% NaCl and reduces nitrate and nitrite to N2O and N2. The pH‐salt relationship, the tolerance to nitrite under aerobic and anaerobic conditions, the heat resistance of the spores, and the composition of the gas produced, have been investigated. SUMMARY:A study of the development of the microfloras on the seeds and roots of tomatoes and oats during germination and subsequent root development showed a rapid selective multiplication on the seed during the initial stages of germination and also on the root almost immediately after emergence. Evidence is presented that further development of the root surface population after the initial high rate of multiplication was dependent on the normal development of the plant.Direct microscopic observations of the micro‐organisms of the root surfaces showed interesting differences between the roots of tomatoes and oats. In the former, the root hairs of young plants were free from bacteria but in the oats even young root hairs supported large numbers of organisms. In both plants the root tips were invariably free from organism

SUMMARY:The growth rates of eleven representative thermoduric bacteria, comprising 3 aerobic spore formers, 3 streptococci, 1Corynebacterium lacticumand 4 micrococci, have been determined in glucose broth andsterilepasteurized milk at 37·5°, 26° and 15°. The spore formers and streptococci were generally not affected by the presence of inhibitory factors in pasteurized milk. When multiplication of micrococci andC. lacticumoccurred in milk this was only after a lag period. One micrococcus showed an unusual series of growth phases in glucose broth at 37·5°, possibly due to the appearance of mutants or to adaptation of the organism to growth at that temperature. This was not observed in pasteurized milk.C. lacticumdied off when incubated in glucose broth at 37·5°.None of the keeping quality tests was more effective than any other in detecting these organisms in milk. The micrococci andC. lacticumhad little effect on the keeping quality of pasteurized milk within the period of ‘commercial life’. SUMMARY:The use of a selective solid medium for counting lactobacilli in Cheddar cheese is described. It has proved useful for this purpose, especially in the early period of ripening when large numbers of streptococci render other methods impracticable.The medium, in a semisolid form, is more sensitive for the detection of heterofermentation in lactobacilli than media previously available. The possibility of using it to count heterofermentative lactobacilli and leuconostocs is discussed.

SUMMARY:The modified Rogosa media (acetate broth and acetate agar) developed by Mabbitt&Zielinska (1956) have been compared with tomato juice media for the growth of representativeLactobacillusspecies.Most of the species tested grew markedly better in acetate broth than in tomato dextrose broth, but some cultures did not grow well in the acetate broth although they grew normally in tomato dextrose broth. The acetate agar was satisfactory for counting those lactobacilli cultured at 30° but was inferior to tomato dextrose agar for counting those grown at 37

SUMMARY:Anaerobes were found to be widely distributed in the soil of the catchment area of a city water supply, and it is suggested that many of the anaerobes found in the water are derived from the soil. These organisms do not therefore provide a useful index of faecal pollution of water.
