SummaryThe application of short‐term tests, particularly those involving the use of bacteria, has demonstrated the presence in foods of several hundred chemicals with mutagenic activity. The pyrolysis of proteins (heating above 30(fC) and the reaction at lower temperatures between carbohydrates and amino‐acids has been shown to result in the formation of a range of potent mutagens. Despite the fact that substances identified as mutagens in short‐term tests are usually carcinogens in animal feeding tests, the value of short‐term tests for predicting human health hazards remains problematical.
