摘要:
In the interest of promoting free and open discussion of problems affecting nutrition, the directors of the White House Conference on Food, Nutrition and Health, Dr. Jean Mayer and Mr. Robert B. Choate, were sent the reports published in the Winter Issue of NUTRITION TODAY prior to publication. They were offered an opportunity to present their views on our report and our editorial comments. Dr. Frederick J. Stare, Chairman of the Department of Nutrition at Harvard University School of Public Health, of which Dr. Mayer is a member, replied on behalf of Dr. Mayer. Mr. Choate, of Washington, D.C., elected to speak for himself.

The only sure sign of life on another planet would be evidence of the presence of water. Water is very nearly the indispensable nutrient to all forms of life. Understanding how this most precious of substances is organized in the body is basic to a full appreciation of the metabolism of health and disease.

Some men can consume 9000 kilocalories a day and not get fat. They may even be underfed. Or so a young girl found when she spent a summer cooking for a camp full of lumberjacks.
