摘要:
The fourth edition of the Dietary Guidelines is issued jointly by the US Department of Health and Human Services (HHS) and the Department of Agriculture (USDA). Revised every 5 years since 1980, the 1995 edition is the first to be mandated by Congress. The Guidelines are based on established medical and scientific knowledge at the time they are issued and provide nutrition and dietary guidance for the public. Each Federal agency is required to promote these Guidelines in carrying out any Federal food, nutrition, or health program. This paper is based on a presentation made at the Society for Nutrition Education's 1995 annual meeting.

Lead, as an environmental contaminant, exerts its adverse effects on physiologic systems through interaction with many and diverse substances. This article focuses on the consequences of excessive lead intake on the metabolism of nutrients. It highlights their influences on the development of young children, who are especially vulnerable to the toxic impact of lead.

Malnutrition spans the full spectrum from protein-energy deficit to obesity, both of which are health concerns for older persons. Such nutritional deficiencies or imbalances can adversely impact health, quality of life, morbidity, mortality, and associated health care utilization. With older persons living longer and increasing in absolute numbers, it can be anticipated that demands for health care services will challenge us to revise our current approach to health care.

For a decade, one of the most controversial issues in labeling has been the use of health claims on food products. The evolution of the science of nutrition that drove the rest of the recent changes in food labeling has also driven this issue. This column summarizes recent events surrounding the regulation of nutrient content and health claims on conventional food products. Comparable regulations for dietary supplements will be discussed in the next issue.
