Nutrients serve not only as structural components of the body and its metabolic webs but also as regulators of the expression of genes whose products are cell components. In turn, the genetic background of the consumer determines how much of a given nutrient is needed and tolerated. Between minimal need and maximal tolerance is the intake that potentiates good health and promotes optimal nutritional status.

The Human Genome Project has and will continue to influence the fields of basic and clinical nutrition. The different tools of molecular biology employed to map the human genome have made it possible for researchers to locate and characterize genes responsible for single-gene diseases such as phenylketonuria. Although the Human Genome Project is revolutionizing all fields of medicine, pediatrics will be one of the first medical specialties to profit from its research and technology.

Presented at the Oldways Preservation and Exchange Trust International Conference on the Mediterranean Diet, January 1998, Cambridge, MA.In a society that is being rapidly pushed toward globalization, encouraging a diet that is locally produced seems, at first, both impractical and backward. It is argued here that local diets are, on the contrary, practical and future oriented. Eaters who base their diets on food produced near where they live can help retain local farmland, minimize the environmental impacts of food production and transport, reduce personal exposure to toxic organisms, and enjoy eating interesting and healthful eating experiences.
