Serum IgG antibodies to ovalbumin, gliadin andβ-lactoglobulin were determined in a group of 18 atopic adults, and compared to the concentrations observed in an age/sex matched group of non-atopic subjects. Anti-ovalbumin IgG concentrations were significantly higher (mean±s.e.m., 369±93μg/ml) in the atopic group compared with the non-atopic group (169±31μg/ml;P<0.05). Anti-gliadin and anti-β-lactoglobulin IgG concentrations snowed no differences between the atopic and non-atopic subjects. Anti-ovalbumin IgG concentrations in both groups were significantly higher than the concentrations of IgG antibodies to gliadin and pMactoglobulin. The concentrations of the three same specific food antibodies were determined in five atopic and five non-atopic subjects at six week intervals over the period of 12 months. No significant changes in specific antibody titres were noted over this period of time in either atopic or non-atopic subjects.

摘要:
This investigation was undertaken to study the role of bifidobacteria in colonic nitrogen metabolism in CF1mice. Oral administration ofBifidobacterium pseudolongumisolated from the fecal material of CF1mice and the bifidogenic factor Neosugar significantly reduced plasma ammonia levels in animals fed with either a normal diet or a 50% protein diet. Changes in hepatic arginase activity and fecal excretion of ammonia and urea were not significant. Plasma ammonia concentration was inversely correlated with colonic bifidobacterial count. Cecal, colonic and fecal pH were significantly lower in animals fed bifidobacteria. Low intestinal pH has previously been shown to suppress the rate of ammonia production, trap ammonia in the lumen for bacterial assimilation, and enhance fecal elimination of ammonia in the form of bacterial proteins. The results of this study indicated that consumption of a host specific strain of bifidobacteria along with a growth factor can effectively alter the intestinal environment and induce favourable conditions on host metabolism such as in the management of elevated plasma ammonia levels.

摘要:
Cardiovascular responses to sustained isometric hand grip were investigated in 18 healthy adult males, six of whom were undernourished labourers with a low body mass index. The undernourished subjects had the lowest basal systolic blood pressure and demonstrated the smallest rises in systolic and mean arterial pressure following sustained isometric hand grip for two minutes at 50% maximum voluntary contraction. The results indicate a reduced functional response in the undernourished possibly due to reduced activity of sympathetic nervous system function.

摘要:
Differential thermograms of concentrated model systems containing sucrose, polydextrose, wheat flour and egg white were produced between 7 and 135°C. Both sugar and polydextrose raise the egg protein denaturation temperatures to a similar extent. Polydextrose raises the starch gelatinization temperature more than sucrose. When incorporated into high ratio cake batters as a sucrose replacer, polydextrose raises the starch gelatinization temperature to such a degree that it no longer coincides with protein denaturation, as occurs in conventional all sugar cakes. It is proposed that differences in the texture of the two cakes are due to these thermal events and their influence on structure creation.

Measurements were made of the absorption up to the end of the ileum and of the urinary excretion of D-xylose, L-arabinose and D-galacturonic acid given to pigs. When given at a rate of 4g/day mean ileal digestibilities were 0.96 for xylose and 0.76 for both arabinose and galacturonic acid. Mean urinary excretion, as a proportion of the daily dose, was 0.35 for xylose, 0.42 for arabinose and 0.01 for galacturonic acid. When arabinose and galacturonic acid were given at a rate of 30 g/day mean ileal digestibilities were 0.56 and 0.34 respectively; the corresponding proportions of the dose excreted in the urine were 0.42 and 0.02. Indirect calorimetry was used to measure the heat increment associated with a single large dose of each carbohydrate. The mean proportion of the energy of these supplements which was retained amounted to 0.75 for xylose, 1.00 for arabinose and 0.75 for galacturonic acid.

Metabolic responses to barley(Hordeum vulgare)were studied in six healthy human subjects (five male, one female). The trial comprised two dietary periods, control and experimental, of four weeks each, separated by a washout period of one week. The control diet was one to which the subject was normally accustomed. In the experimental diet, part of the daily cereal intake was replaced by 100 g of whole barley flour. The control and experimental dietary periods were random in sequence and a cross-over design was used. A meal tolerance test using a 50g carbohydrate portion of white bread was performed at the beginning and end of each dietary period. Fasting blood samples were collected for estimation of glycosylated haemoglobin, total cholesterol and triglycerides at the beginning and end of each dietary period. No measured variable changed significantly during the control period. At the end of the experimental period, the MTT incremental area under the 3h glucose curve decreased from 107.9±54.8 to 91.5±30.8 (mean±s.d., mg/dl/3h;P<0.05) and HDL cholesterol increased from 50.7±9.2 to 65.5±15.4 (mean±s.d., mg/dl;P<0.05). The observed changes are possibly mediated by the water solubleβ-glucan fraction of barley dietary fibre and are favourable in relation to prevention and treatment of diabetes mellitus and atherosclerosis.
