摘要:
Salting and smoking had no effect on the biological value of cod protein, as indicated by Protein Efficiency Ratio, gross protein values, total lysine and methionine content, "available lysine" values, and plasma free lysine and methionine levels in human subjects. It was concluded that smoked and salted codfish can provide protein of high nutritional value.

Methods are described for the separation of 2,4-dinitrophenylhydrazones of normal aliphatic monocarbonyl compounds by thin-layer chromatography. Magnesia-cellulose thin-layer plates are used to separate mixtures of these compounds into classes (n-alkanals,n-alkan-2-ones,n-alk-2-enals, andn-alka-2,4-dienal). Propylene glycol- and petrolatum-impregnated silica gel plates were also used to separate each class into homologues. The former impregnant resolved the compounds with less than seven carbons and the latter with more than six carbons. Two-dimensional separation was accomplished by resolving a mixture of these compounds into classes on magnesia-cellulose in the first dimension and the classes into homologues on either petrolatumor propylene glycol-impregnated silica gel plates in the second dimension.

Volatile monocarbonyl compounds were isolated from heavily salted cod (Gadus morhua) as the 2,4-dinitrophenylhydrazones. These compounds were separated by thin-layer chromatography first into classes and then according to chain length.n-Alkanals C1–5andn-alk-2-enals C5–6were conclusively identified.n-Alkanals C8,10andn-alk-2-enals C4,7,8were tentatively identified. An unknown compound corresponding ton-hexanal, except in the melting point, was isolated. Formaldehyde, and to a lesser extent, acetaldehyde and propanal, were the major monocarbonyls present in salted cod.

Three methods for estimating oceanic natural mortality rates of Pacific salmon under certain survival conditions are presented. Estimates of ocean mortality rates of Bristol Bay and Karluk sockeye are given. The mortality rate during the year immediately preceding the last 2 months of ocean life of Bristol Bay sockeye that migrated to sea as 3-freshwater fish in 1956 and returned as mature 3-ocean fish in 1959 is estimated to be 28.9%. The average ocean mortality rate during the penultimate year of life of 3-ocean Bristol Bay sockeye is estimated to be 19.5% for the years 1956–57 to 1960–61. The natural mortality rate during the third year of ocean life of 3-freshwater Karluk sockeye is estimated to be 28.2%. Corresponding estimates of average monthly instantaneous mortality rates are 0.028, 0.018, and 0.031, respectively.

Pretreatment of fresh fillets of Dover sole (Microstomus pacificus), Pacific cod (Gadus macrocephalus), halibut (Hippoglossus stenolepis), and red snapper (Sebastodes ruberrimus) with sodium tripolyphosphate prior to freezing was found to be effective in reducing drip loss during thawing. Sodium chloride, in a few trials, was effective in reducing drip and cooking losses. Tripolyphosphate and sodium citrate dip solutions of corresponding ionic strengths were equally effective in reducing drip loss during thawing from fillets of red snapper. Pretreatment of chinook salmon (Oncorhynchus tshawytscha) fillets with sodium tripolyphosphate preceding freezer storage was found ineffective in retarding lipid oxidation during storage at −10 °C; however, unlike sodium chloride, sodium tripolyphosphate did not accelerate development of oxidative rancidity.

Glycolytic activity in the muscle of heavily-feeding trap-caught cod (Gadus morhua) during the struggle involved in catching, and the subsequent post-mortem changes during holding in ice and at ambient temperatures were investigated. Struggling of the fish in the trap and during boating was sufficient to cause a partial depletion of the muscle energy reserves, as indicated by lactate production and nucleotide dephosphorylation and deamination. One cod from the trap, boated and killed without apparent struggling, had a high initial glycogen content of 550 mg/100 g. During subsequent storage of the brailed fish in air or ice the glycolytic processes, including nucleotide degradation, continued, although during the early post-mortem period the rate of lactate production greatly exceeded that of glycogen depletion. Little change in concentration of the metabolites occurred on freezing and storage at −26 °C for 4–6 weeks. In contrast, trawled offshore cod and haddock, regardless of ante-mortem treatment, contained little or no glycogen; almost complete dephosphorylation and deamination of the nucleotide compounds had occurred during the struggle involved in catching. Therefore, at the time of boating, the energy reserves in the trawled fish have been exhausted or nearly so.

Sublegal, post-molt, male king crab graspers are capable of reproducing and may suffice as brood stock in the male-only king crab fishery. Observations in tanks revealed that the younger males bred successfully with an average of five females.

Sodium hydroxide was added to carbonate-free sea water and the point at which Mg(OH)2precipitated was detected optically. At this point the hydroxyl ion activity was calculated from the measured pH of the solution and the magnesium ion activity was calculated from the activity product for Mg(OH)2.From a knowledge of the magnesium ion activity and other data, it was estimated that about 3% of the total magnesium in the sea water was in the form of.
