The construction and operation of an apparatus for measuring the amount of energy expended in cutting muscle fibers is described. The measured energy permits a quantitative comparison of the toughness of different samples. Measurements on a model system of paraffin wax show a variation of ±5%. With muscle fibers of raw and cooked salmon, lingcod and beef, the variation in these measurements was sometimes as high as ±20%.

The bound nucleotides of lingcod (Ophiodon elongatus) muscle have been examined in relation to the denaturation of muscle proteins during frozen storage. No difference between the quantity of adenine nucleotides (principally adenosine diphosphate) bound in washed muscle residues from freshly frozen (pre-rigor) and in those from muscle severely denatured during frozen storage could be detected. Somewhat more adenosine triphosphate was found bound in crude actin extracts prepared from undenatured frozen muscle than in similar extracts from denatured frozen muscle. Heating lingcod muscle resulted in almost complete release of bound nucleotide.

In the commercial fisheries of the great lakes of Central Africa the nylon gill net is the most widespread type of gear in use at present. Recent increases in fishing effort are believed to have had a marked effect upon the abundance of some species and this paper describes a method of estimating the fishing mortality from a fishery of this type. The method is demonstrated in its application to a population ofTilapia esculentain Lake Victoria. In particular the data from the gill net fishery are combined with the known selectivity of the gear to distinguish between fishing mortality and trends in natural loss from the population with increasing age of the fish. The study also shows that the population dynamics of a tropical fish species are amenable to conventional techniques of analysis.

Six composite samples of British Columbia whole herring meals representative of the 1960–1961 commercial production were analyzed for protein, fat (ether extract), ash, water, minerals, vitamins of the "B complex", available lysine, 13 amino acids and protein digestibility. The biological availability of the protein was also checked by determining the supplementary protein value for chicks. The results, which are tabulated and discussed, indicate that the herring meals were of comparatively consistent composition and of high nutritional value.
