摘要:
The purpose of this study is to determine the ability of a group of older adults to distinguish between a new artificial sweetener (Sweet OneR) and sucrose and to determine a sweetener preference among older adults. Participants (n = 112), 56-90 yrs. sampled a plain low-fat blended cottage cheese and iced tea sweetened with either sucrose or Sweet OneR arranged in a triangle test format. Participants also sampled four low-fat vanilla puddings sweetened with sucrose, EqualR, Sweet'n LowR, and Sweet OneR and ranked them according to preference. Results show participants are able to tell the difference between sucrose and the new artificial sweetener Sweet OneR in the iced tea drinks. Rank order results show this sample preferred EqualR and sucrose as sweeteners. The ability to taste sweetness remains high in aging. Enhancing sweetness without added calories would aid nutritional well being of the elderly.

摘要:
The purpose of this qualitative study was to describe nursing home staffs' perceptions of issues within the group dining room. Data were collected from a convenience sample of nursing home staff attending presentations of a multi-site workshop. Participants (N = 103) from various disciplines wrote responses to open-ended questions pertaining to their facilities, strengths and weaknesses within the dining activity. Content analysis generated five major categories including: Resident Issues, Physical Environment, Psychosocial Environment, Food and Serving Process, and Staffing Issues. These categories summarize both challenges and successes providing direction for an interdisciplinary approach to the group dining room.

This study evaluated snacking behavior among 335 non-institutionalized Americans aged 55 years and older. Respondents were randomly selected from the fifty states excluding Hawaii and Alaska and questioned by trained telephone interviewers using the CAT1 system. The study found that the majority of seniors snacked at least once daily with only 2.1% reporting that they never snack. Morning is the least common and evening is the most common time for snacking. Almost all snacking occurs at home. When selecting snacks, taste outranks nutrition as selection criteria. Fruits were popular but were chosen less often than other snacks. Findings suggest that snacking should be targeted with specific nutrition education messages that address the influences of time of day, location, and qualities of foods upon the choices made when snacking.

摘要:
To define the effects of sociodemographic factors and life-styles on intakes and biochemical measures of iron, thiamine, riboflavin and ascorbic acid in healthy elderly Japanese, a survey was conducted on 190 subjects aged 65 to 80 years. Results of multivariate analyses of the data indicated that, independent of the other factors, smoking was significantly and negatively associated with ascorbic acid status and its intake (expressed as its concentration per unit of energy in diets). After controlling for the other factors, participation in a nutrition education program in the past was significantly and positively associated with intakes of thiamine, riboflavin and ascorbic acid. Biochemical measures of these three vitamins were also significantly better in the participants.

This study reports the initial results of a baseline cross-sectional evaluation of the health and nutritional status of 58 old-old African Americans, 74 years of age and older, residing in low income housing complexes in metropolitan Oklahoma City. Although the population had a high overall functional status, cognitive status, and mood, there were a number of nutritional parameters suggestive of nutritional risk. In particular, 20% of subjects had relatively low serum albumin levels, 14% had serum cholesterol levels below 160 mg/dl, and a subset of the population reported low intake during 24 hour dietary recall. The National Center and Caucus on Black Aged report that 60% of African American elders live at or below the poverty level. These study findings suggest that the present cohort of African American elders may be at nutritional risk.

Six food service supervisors (FSSs) working in skilled nursing facilities were trained to use a hand-held computer, COMPU-CAL/PRO 5.1, to screen institutionalized elderly patients for selected nutritional variables and to record results in the medical record. The study demonstrates that hand-held computer-assisted nutritional screenings: (1) are readily adaptable to on-going efforts, (2) are useful in identifying potential indicators of poor nutritional status in institutionalized elderly patients, (3) can be taught to FSS in a relatively short time, (4) increase nutritionally relevant variables that can be assessed, and (5) improve the quality of documentation in the medical record.
