摘要:
The use of milk products and responses to attitudinal questions about milk products is described for 100 individuals 65 years of age and older. Two familiar foods, fluid whole milk and cottage cheese, and two less familiar foods, coffee whitener and yogurt were selected for attitudinal questions of the semantic differential type. Discrete sales emerged for the familiar but not for the less familiar foods. The sematic differential scaling technique was useful in disclosing a relationship between attitude and use of some foods but was too limiting a tool to probe the attitude-food selection relationship for all foods studied.

Research on the affects of wine programs in geriatric units and nursing homes, as well as among elderly living in the community, has demonstrated that moderate use of wine in later life is beneficial. Benefits noted in these studies include improved morale, more zest for life, more mature social interaction, more restful sleep at night, and reduction in the use of psychotropic drugs. Of particular note were improved relations between patients and staff in nursing homes. This was attributable to the increased self-esteem of the patients who became more interesting as human beings to the staff. A psychosocial explanation of these changes centers on wine as a symbol of maturity and conviviality, allowing the old person to feel once again grown-up and part of the human family. Our psychobiological hypothesis is that chronic fatigue may be responsible for some of the behaviours associated with old age. Poor sleep may be attributable to a deficit of fama-amino-butyric acid (GABA), a substance found in the body as it prepares for sleep and also in wine. Although our behavioral data point to the positive effects of wine on sleep and related psychosocial behaviors, more research is required. To promote moderate use of wine among the elderly, attention should be given to educating them about the value of wine. The wine industry could also develop wines which would be especially appealing to older people.

Participation of the elderly in the food stamp program in 1977-78 and 1979-80 are studied using nationally representative and comparable samples. The impact of the elimination of the purchase requirements for the Food Stamp program and changes in other eligibility requirements are studied. Large increases in FSP participation are documented as are some of the factors, particularly social isolation, which are still associated with lowered participation.

摘要:
An easy to use instrument for monitoring food intake of geriatric patients was developed and tested in two skilled care facilities. The instrument, based on the Basic Food Groups, was simplified by a check system for quick and thorough completion by personnel with limited training. Food items were printed on the instrument to avoid recording error and to expedite use. Space was available for including additional unlisted food items. An evaluation and recommendation section at the bottom of the instrument allowed the dietitian or supervisor to assess the results of intake and to take appropriate action. Intended for use on a continuous rotation system, the instrument also provides a permanent record for future reference.

摘要:
An effective approach to the nutritional management and support of the elderly post CVA coma patient is described. These same procedures can be translated for treating the conscious albeit handicapped post CVA elderly patient to assure that he is not allowed to be put at risk nutritionally. Adequate and appropriate nutritional support is a major dimension in affording the elderly a better quality of life.
