摘要:
There is increasing evidence of the apparent existence of widespread subacute or subclinical malnutrition among persons 55 and over. Symptomology consequent to this malnourished state is frequently assigned to "aging" or associated with non-nutritional organic pathology. Changing nutritional habits may hold promise for the delay, prevention, and/or reversal of a number of chronic disease characteristics of the later years. Suggestions are made for the development and implementation of appropriate nutrition and nutrition education.

摘要:
A survey of 73 elderly participants in a nutrition program for the elderly was conducted to determine the influence of selected variables on a) the dietary quality of the sample; b) the frequency of participation in the meal program; and c) on the contribution of the program to the diets of the sample. Research findings were used to suggest possible implications in program planning and implementation so that the program might increase the nutritional benefits to the participants.

摘要:
In this study, a programmed instruction module, "Adaptations of Homemaking Skills for the Aged: Nutritional Needs," and a slide presentation, "Are You Ready to be an Older American?", were tested in secondary home economics classrooms. Specific objectives were twofold: first, to determine what effect, if any, the module, the slides, or the combination had on the attitude of students toward the aged; and second, to explore the feasibility of the use of the independent learning module in teaching concepts about the nutritional needs of the aged. The sample consisted of 70 high school students comprising four classes and including both males and females, blacks and whites. The module alone or the module with slides proved to be the most effective means of teaching the concepts of nutritional needs of the aged. None of the materials, the slides, the module, or their combination made a significant difference in the attitudes of students toward the aged. Further exposure to information about the aged, whatever the format, is needed to improve the negative attitudes toward the aged found in this study and others preceeding it.

Utilizing the continuity/discontinuity theory as a framework, an exploratory and descriptive study was conducted on 150 minority elderly (Black, Chines, and Mexican Americans) in three nutrition programs. Three hypotheses tested this theory using four sets of independent variables: food patterns, health status, social interaction, and program activities; and the dependent variable: levels of participation in nutrition programs. Through interviews, the findings partially supported the hypotheses as well as the null hypothesis of no significant differences among ethnic groups. Some policy, research, and practice issues were identified. It is hoped that this study has generated some new understanding and interests in supporting satisfying life patterns and future improvements in nutrition programs.

Based on 24-hour diet recalls, the dietary intakes of 97 non-institutionalized elderly females were assessed to determine whether those consuming congregate noon meals had a higher intake of nutrients than their counterparts. Mean nutrient intakes approached 65% or exceeded two-thirds of the Recommended Dietary Allowances except for B6. Congregate meal participants had significantly higher nutrient intakes at the noon meals than those not consuming congregate meals. However, other than for vitamin A, the consumption of congregate meals did not contribute to higher total daily nutrient intakes. Socioeconomic, health, and nutrition factors were also assessed. Increased age was associated with lower nutrient intakes; increased education was associated with higher nutrient intakes.

A survey of 169 bi-racial participants of the Alabama Nutrition Program for the Elderly was conducted to establish the frequency of obesity in race and sex groups and to examine the relationship of obesity to social as well as physical well being. Physical health parameters measured included: frequency of chronic disease, days sick per month, functional capacity, and self-perceived participation and activity level. Analysis of the data revealed that significantly more women than men were obese. A significant positive relationship was found between hypertension and obesity in white women. Neither functional capacity nor sick days per month were significantly correlative with obesity. Self-perceived health among black men were inversely correlated with increased weight status. Correlations between social variables and obesity were found ony in the area of activity, which was correlated with obesity for white women and black men.

摘要:
The predisposition of elderly hospitalized alcoholic veterans to various food consumption patterns is marked by certain characteristics. Degrees of depressed and non-depressed moods and feelins were identified in this study through a standardized Adjective Check List. The number of food groups underconsumed was not shown to be related directly or significantly to the control variables. Recommended is an intervention model to enhance effective management, continuity of care and follow-up of the older patient during and after hospitalization.
