摘要:
Limited information is available on iron nutriture of the elderly. Therefore, a study was carried out to assess the iron nutritional status of a selected group of elderly black persons in Washington, D.C. The sample consisted of 186 black, low-income persons (130 females and 56 males) between 60 and 94 years of age. Red blood cell indices were determined using a model S Coulter counter. Serum ferritin was assayed immunoradiometrically. Three-day dietary records were evaluated to determine iron intakes. Forty-three females (33%) and 27 males (48%) had hemoglobin values less than 12 and 14 g % respectively. Iron deficiency (serum ferritin<20 ng/ml) was found among 12 males (21%) and 31 females (23%). Forty-one percent of the subjects consumed less than the recommended dietary allowance for iron. Significant correlations were obtained between average daily intake of iron and each of the red blood cell indices (p<0.001) and serum ferritin (p<0.05). Significant correlations were also obtained between serum ferritin and both hemoglobin and hematocrit (P<0.01). It was concluded that a relatively high prevalence of iron deficiency existed among the subjects and that iron deficiency contributed to the low hemoglobin levels.

摘要:
A nutrition education program was developed to supplement and possibly enhance antihypertensive therapy for the hypertensive elderly. Nutrition lessons were presented once a week over an eight week period with an attempt to increase dietary intakes of calcium, magnesium, and potassium and to decrease sodium. In order to determine retention of nutrition lesson content, an additional eight-week phase, without nutrition education, was evaluated. Thc success of the nutrition education program was determined by comparison of control and experimental groups; pretest-posttest scores, selected anthropometric determinants and blood parameters, blood pressure readings, and dietary intakes. Results indicate nutrition education can be a positive influence on dietary intakes of hypertensive elderly and may offer more optimistic hopes for the border-line hypertensive elderly not yet on antihypertensivc therapy.

摘要:
Food and Labor Costs, number of nutrients in the menu below one-third of the RDA and client participation were analyzed in fourteen Title 111 nutrition programs for the elderly. Food and labor costs were directly related with fifty percent of the facilities being under the monthly median of $2,801 and $3,862 respectively. In all sites menus were deficient in vitamin B6, folacin and zinc. Cost did not affect nutrient quality or senior citizen participation. The study suggests that several levels of monitary expenditure will equally attract individuals to the Title 111 program and provide the same menu quality as measured by nutrients meeting a percentage of the RDA.
