This is a report of a dietary analysis of meals offered in one large congregate feeding program and clients' consumption patterns as they relate to self-reported dietaq restrictions. Most meals exceeded dietary guidelines for kilocalories, cholesterol, and proportion of energy from fat Of 438 congregate meal clients 60 years of age and older who were surveyed at senior citizen centers and congregate meal sites, 30% reported following a "special diet." The most commonly mentioned dietary modifications were low sodium and/or low fatbow cholesterol. Clients who reported dietary restrictions also reported eating fewer congregate meals per week than did clients who denied dietary restrictions.

摘要:
"Self-CARE for a Healthy Heart" promotes healthier dietary practices to reduce cardiovascular disease risk factors. Forty-four adults, aged 60-90, participated. The objectives were to determine if this self-paced program improved dietary habits and to identify how it could be better tailored for elderly. After finishing Self-CARE, 47.8% of respondents reported choosing more low-fat foods. Over 39% reported selecting fewer foods associated with heart disease. Minimal suggestions were made to improve the program. The print format, as a method to learn how to lower blood cholesterol, was preferred by a majority. Over half thought Self-CARE was effective with the elderly. Although measured dietary behavior did not improve, the format and content of Self-CARE were appropriate for use with seniors.

摘要:
This article discusses a research project which involved determining use of frozen meals by the elderly and identifying their food preferences. A total of 113 adults provided information about appliances in their home for storing and heating frozen meals, their frequency of use of frozen meals, and their preference for 48 commercially frozen meal menus. Results indicated that older individuals used frozen meals more frequently than younger respondents. Older individuals also indicated a higher preference or acceptance of most menu items.

To compare the cardiovascular and metabolic responses to different exercise modes, ten healthy, elderly men (aged 71.4 * 4.2 yr) walked and cycled in the low-sit position for 15 min each at 70% of peak heart rate. Fifteen minutes of recovery separated the exercise bouts. Analysis of expired air was used to calculate oxygen consumption (V02), respiratory exchange ratio (RER), 02 pulse, total energy expenditure (TE) and fat oxidation (FO). Ratings of perceived exertion (RPE) were recorded for both legs and breathing. Each subject maintained similar heart rates on each of the exercise bouts (mean = 108 beats. min-I). No significant differences were found in V02, O2 pulse and TE. RPE's were significantly lower during walking than cycling (P<0.05). FO was 42% higher during walking than cycling (P<0.05). These results suggest that although the cardiovascular response and TE use during these two modes are similar, elderly men bum more fat during walking than low-sit cycling.
