A group of 18 elderly nursing home residents, whose food intake was considered inadequate, was evaluated with respect to nutrient intake and selected biochemical measurements. Food eaten provided less than two-thirds of the recommended amounts of vitamin A, thiamin, riboflavin, and calcium for approximately 50% of the women. Intake of iron by one-third of the women was also less than adequate. Forty-four, 61 and 50% of the hemoglobin, serum protein and vitamin A values, respectively, were low or deficient. The amounts of thiamin and riboflavin excreted in urin were low in 31 and 88% of the women, respectively. The addition of a liquid dietary supplement to the diets of the elderly women improved food intake and biochemical measurements of selected nutrients in some cases. The percentage of low hemoglobin, serum protein and vitamin A values decreased 22, 50, and 17%, respectively. Urinary excretion of riboflavin and thiamin for each subject exceeded the acceptable levels at the close of the 30-day supplementation period. On the basis of selected measurements, the supplements seemed to benefit some women to a greater extent than others.

摘要:
The place of culture and culturally congruent foods in the life of institutionalized aged is examined. Cultural identity within a group and psychological factors related to positive feelings towards oneself and to the group which one belongs are discussed as important variables in retaining and regaining health through nutrition. Suggestions are made for comparative research of culturally congruent and in-congruent diets.

Food intakes, nutrition knowledge and selected demographic and personal information were collected from a group of 169 participants in the National Nutrition Program for the elderly in Prince George's County, Maryland. Mean intakes of most nutrients were high, relative to the RDA's, but the ranges of nutrients consumed showed a considerable variation among the group. Intakes of calcium and thiamin, by females were lowre than those of males. Scores on a nutrition knowledge test were generally low, indicating a need for improved nutrition education efforts in the meal program. Other factors related to dietary status and nutrition knowledge are reviewed and discussed.

A survey of 106 adult volunteers, between 60 and 90 years of age, was conducted to determine their vitamin E status, and to investigate possible relationships between plasma vitamin E level, the participant's age, and their plasma cholesterol level. The mean±SD of vitamin E levels was 1.90±0.56 mg/100 ml. When the participants' vitamin E levels were compared by age groups (60-70, 71-80, 81-90), sex, and by whether they were institutionalized or not, no significant difference was found. There was a significant, positive correlation (P<0.001) between the measured plasma vitamin E and cholesterol levels. Significant, negative correlations were found when the plasma vitamin E level (P<0.05) or cholesterol level (P<0.001) was compared against age. There was no vitamin E deficiency observed in the elderly populations studied.

Concepts and practices related to nutrient supplement usage for young adults were compared to those of older adults in Colorado. Seventy-five percent of all respondents used nutrient supplements. The use of supplements was more prevalent among younger adults than older adults and most prevalent among young women. Multivitamins, iron, vitamins C and E were most often selected for improvement of energy and inadequate diets. Vitamin C was used to prevent colds and other illnesses. Vitamins A and E were used to benefit hair and nails. Young men and older women used supplements to prevent colds more often than older men and younger women. Other differences related to age and potential hazards of continued use of large amounts of certain vitamins and minerals are discussed.

This study, conducted among a group of 169 senior citizens who participated in the Title III-C Meal Program in Prince Georges' County, Maryland, researched relationships between demographic, knowledge and attitude factors, and dietary status. Analysis consisted of Pearson's product moment correlations, and multiple regression. Variables statistically significant in predicting the nutrition knowledge score were: level of education, self-rating of diet, self-rating of health, and age. Multiple regression was used to determine which dependent variables most significantly predicted the variance in independent variables of calories and of nutrients. Results of the research are used to make suggestions for program planning and evaluation.
